Time 45m

Yield 8 servings

Number Of Ingredients 6

5 medium dried arbol chiles
1 1/2 teaspoons kosher salt
1 teaspoon finely grated lime zest
1/2 teaspoon sugar
Two 19-ounce cans chickpeas, rinsed and well drained
Vegetable oil, for frying

Steps:

  • 1. Place the chiles in a spice grinder and grind until fine. Add the salt, lime zest and sugar. Pulse a few more times until well combined and set aside.
  • 2. Spread the chickpeas in a single layer on paper towels and pat dry. Heat 3/4 inch of oil in a heavy-bottomed shallow pot or small Dutch oven to 375 degrees F. Carefully add the chickpeas in small batches, about a cup per batch, to the oil. (The oil will bubble up for a few seconds.) Fry, stirring occasionally, until browned and crisp, 8 to 10 minutes per batch. Transfer to a paper towel-lined tray and immediately sprinkle with some of the chile salt. Cool slightly and serve.
  • Chef's Note: The chickpeas can be fried 2 to 3 days ahead of time. Cool without the chile salt and store in a sealed plastic container. Before serving, spread in a single layer on a baking sheet and toast in a 400-degree F oven until sizzling and crispy. Season with the chile salt, cool and serve.

Tips:

  • Choose the right chickpeas: Dried chickpeas are best for this recipe, as they hold their shape better than canned chickpeas. If using canned chickpeas, be sure to rinse and drain them well before using.
  • Soak the chickpeas overnight: Soaking the chickpeas overnight will help them to cook more evenly and quickly. If you don't have time to soak them overnight, you can quick-soak them by boiling them for 1 minute, then removing them from the heat and letting them sit for 1 hour.
  • Use a variety of spices: The spices in this recipe can be adjusted to your taste. Feel free to add more or less of any of the spices, or substitute different spices altogether. Some good options include cumin, coriander, paprika, chili powder, and garlic powder.
  • Roast the chickpeas until they are crispy: The chickpeas should be roasted until they are crispy on the outside and tender on the inside. This will usually take about 30 minutes, but the cooking time may vary depending on your oven.
  • Serve immediately: The chickpeas are best served immediately after they are roasted. They can be served as a snack, appetizer, or side dish.

Conclusion:

Crispy spiced chickpeas are a delicious and healthy snack or side dish. They are easy to make and can be tailored to your own taste. With a little creativity, you can create a variety of different flavor combinations. So next time you are looking for a healthy and satisfying snack, give crispy spiced chickpeas a try!
