MARINATED CUKES AND ONIONS

MARINATED CUKES AND ONIONS image

I used to not care for these growing up, as Mom didn't put any dairy in them. Well, 45 years later, while working @ an assisted living home, the cook found this in an old cookbook and made them up. Thank you Nita. I was skeptical, but tried them and they were the bomb. Happy Cookin'

Time 15m

Number Of Ingredients 8

3/4 c sugar
1 tsp salt
dash(es) pepper
2/3 c apple cider vinegar (white will work, too)
1/4 c water
1 1/2 c mayonnaise or miracle whip
2-3 cucumbers, peeled, sliced in coins
1-2 sweet, red, yellow or white onions, sliced into rings or 1/2 rings

Steps:

  • 1. Mix all ingredients, except veggies, with a whip until smooth. Add veggies at this point. Keep refrigerated. Add more veggies as needed.
  • 2. Use your imagination...zucchini, radishes, don't just use what I've posted. Use what's in your garden or your local farmer's market. Happy Cookin'

Tips:

  • Choose the right cucumbers and onions: For best results, use pickling cucumbers, which are smaller and have thinner skins than regular cucumbers. For the onions, choose sweet onions, such as Vidalia or Walla Walla, as they have a milder flavor that complements the cucumbers well.
  • Slice the cucumbers and onions evenly: This will help them pickle evenly. Use a sharp knife or a mandoline to get thin, even slices.
  • Use a clean container: Make sure the jar or container you use to pickle the cucumbers and onions is clean and sterilized. This will help to prevent the pickles from spoiling.
  • Follow the recipe carefully: The amount of time you need to pickle the cucumbers and onions will vary depending on the recipe you are using. Be sure to follow the instructions carefully to ensure that the pickles are properly preserved.
  • Store the pickles properly: Once the pickles are made, they can be stored in the refrigerator for up to 2 months. Be sure to keep them in a clean, airtight container.

Conclusion:

Pickled cucumbers and onions are a delicious and versatile condiment that can be enjoyed in a variety of ways. They can be served as a side dish, added to salads or sandwiches, or used as a topping for tacos or burgers. With so many different recipes to choose from, you're sure to find a pickled cucumber and onion recipe that you'll love.
