4 green onions/scallions (| finely sliced)
150 grams (1 cup) cashews (| roasted)
2 mangoes (| diced, skin and seed discarded)
5 stalks celery (| sliced)
250 grams (1 cup) mayonnaise (| whole egg, I use Kewpie)
100 grams (5 tablespoons) mango chutney
2 teaspoons curry powder
1 teaspoon ground cumin

Steps:

  • Place dressing ingredients in a small bowl and whisk until combined. Set aside until it is time to dress the salad. The dressing can be made a day ahead and stored covered in the fridge.
  • Place turkey, celery, cashews, and green onions (scallions) in a large bowl.

4 thin slices of turkey (or chicken)
1 small mango, ripe, finely diced
2 tomatoes, finely diced
1/2 onion, finely chopped (optional)
some mint leaves
some parsley leaves
8 tbsp of extra-virgin olive oil
4 tbsp of lemon juice
ground white pepper and salt to taste

Steps:
