2 tablespoons butter, melted
1/2 teaspoon vanilla extract
2-1/2 cups confectioners' sugar
Food coloring and coarse sugar, optional

Steps:

  • Preheat oven to 400°. In a large bowl, cream shortening and sugar until light and fluffy. Beat in eggs and vanilla. 8 ounces ricotta cheese
2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
2 tablespoons butter, softened
2 cups confectioners' sugar
1/4 teaspoon vanilla extract
1 1/2 tablespoons milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
