DIABETIC OATMEAL-RAISIN COOKIES

Diabetic Oatmeal-Raisin Cookies image

This is my absolute favorite homemade cookie in the whole world! When I make a batch, I have to hide them, give part of them away, and basically lock them in the cabinet. They just don't last. I got so tired of not being able to eat the regular ones from the Elves in the magic tree, so I adapted a really good recipe. I hope you like them as much as I do.

  • Now in a mixing bowl, cream together the granular sugar alternative and the butter. Then add the vanilla and the eggs, gently stirring them into the mixing bowl
  • For the next step, we will add the dry ingredients from the first bowl (flour etc) to the mixing bowl. Do this by adding half of the dry ingredients at a time, mixing gently between additions. Then continue mixing the cookie dough until the ingredients are mixed together.
  • Next, stir in the oatmeal and raisins by hand. Bake these cookies for 10-12 minutes or until the edges begin to brown

Provided by SapphireBlu957

Number Of Ingredients 10

3/4 cup canola oil
1 cup honey or agave nectar
2 eggs, lightly beaten
2 teaspoons pure vanilla extract
1/2 cup raisins
1/2 cup toasted chopped walnuts
1 1/2 cups wheat germ
2 cups old-fashioned rolled oats
3/4 cup whole-wheat pastry flour
1/2 cup powdered fat-free milk

Steps:

  • 1.Preheat oven to 350°F. 2.Line two large baking sheets with silicone baking mats or parchment paper. 3.In a large bowl, stir together the canola oil, honey, eggs, vanilla extract, raisins, chopped walnuts, wheat germ, and rolled oats. 4.In a medium bowl, sift together the flour and powdered milk. 5.Stir the dry ingredients into the wet ingredients until well-combined. 6.Scoop spoonfuls of the cookie dough onto the prepared baking sheets. The cookies won't spread much, so you don't need to leave a lot of room between them. 7.Bake for 10 to 12 minutes or until dry around the edges. 8.Cool on a wire rack and store in an airtight container in the refrigerator.

Tips:

  • Choose oats that are specifically labeled as gluten-free if you have celiac disease or gluten intolerance.
  • Use old-fashioned oats for a chewier texture, or quick-cooking oats for a creamier texture.
  • Add your favorite dried fruits, nuts, and spices to create a custom blend.
  • If you don't have a jar, you can also store the oatmeal in a resealable bag.
  • These gifts in a jar are perfect for any occasion, from birthdays to holidays to just because.

Conclusion:

These diabetic gifts in a jar are a delicious and thoughtful way to show your loved ones you care. They're easy to make and can be customized to fit any dietary restrictions. Plus, they're a great way to use up any leftover oats or raisins you have on hand. So next time you're looking for a unique and meaningful gift, consider making one of these oatmeal raisin gifts in a jar.
