Tips for Perfect Double Peanut Butter Pound Cake:

  • Use room temperature ingredients to ensure proper emulsification and a smooth batter.
  • Cream the butter and sugar until light and fluffy to incorporate air and create a tender crumb.
  • Gradually add the eggs one at a time, beating well after each addition to prevent curdling.
  • Incorporate the dry ingredients in three additions, alternating with buttermilk to prevent overmixing and gluten development.
  • Fold in the peanut butter until just combined to avoid a greasy batter.
