  • Preheat your oven to 350 degrees F and grease an 8x8-inch baking dish with cooking spray. In a bowl, stir together the flour, sugar, cinnamon, baking soda, baking powder, salt and nutmeg with a whisk. (This is your "box" mix. Yes, this is what you're paying the big bucks for.) First received this recipe from a co-worker at a gardening equipment manufacturer; she was an incredible baker, and generous with her recipes!

4 cups apples, chopped
2 cups sugar
2 cups flour, sifted
1 teaspoon salt
1 teaspoon baking soda
1 tablespoon cinnamon
2 eggs, beaten
2/3 vegetable oil
2 teaspoons vanilla extract
1 cup walnuts, chopped (optional)

Steps:

  • Preheat oven to 350°. Grease and flour a 9" x 13" pan.
  • Peel, core, and chop apples. Combine in a large bowl with the sugar.
  • Sift flour, salt, baking soda, and cinnamon together in a separate bowl.
  • Combine eggs, oil, and vanilla extract.
  • Alternately mix dry and liquid ingredients into apple mixture.
  • Stir in chopped nuts, if using.
  • Spread into prepared pan.
  • Bake for 45 minutes.

2 c peeled, cored and chopped apples (today i used a honeycrisp)
1 stick butter, melted - i do mine in microwave - 30 second increments
3/4 c sugar
1 egg
1 c flour
1 tsp each - baking powder & cinnamon
1/2 tsp each - salt & ground nutmeg
1/4 tsp ground cloves
1/2 tsp vanilla extract
1/2 c pecans, chopped
1 Tbsp cinnamon sugar mixture - optional

Steps:

  • 1. Preheat oven to 350 degree F. Grease well, a 9 inch pie plate. Set aside.
  • 2. Melt butter in a large bowl ( I use microwave ) Into the melted butter, add egg, vanilla and sugar and whisk well.
  • 3. Sift the flour, spices, baking powder and add to the egg mixture. Batter will be thick. Stir in apples & pecans until well distributed
  • 4. Spread batter evenly into pie plate.Bake for 40 - 45 minutes or until a pick comes out clean. About 10 minutes before cakes is done, I sprinkle with a cinnamon sugar mixture. This is best served warm with a scoop of vanilla ice cream, or whipped cream...Yum!

1/2 cup rolled oats
1/4 cup brown sugar
1 teaspoon cinnamon
25 g very cold butter (cut into 3 or 4 pieces)
2 medium apples
1 cup sugar
1 egg
125 g very soft butter (either melted or very soft)
1 1/2 cups flour
1 teaspoon baking soda
2 teaspoons cinnamon
1 teaspoon allspice
1 teaspoon salt

Steps:

  • Make the topping first by placing all the topping ingredients into the food processor bowl and process with the metal chopping blade until the butter is chopped into small pieces. Do not over process or the rolled oats will be chopped too fine.
  • Tip topping out of the bowl.
  • Cake:.
  • Without washing the bowl add in the apples which have been cored and cut into about 12 pieces. There is no need to peel them first.
  • Process with metal blade until cut into fine pieces.
  • Add the remaining cake ingredients. It is not necessary to sift the dry ingredients first but make sure the baking soda is not lumpy.
  • Line the base of a 9"/23cm tin with baking paper & butter or spray the sides.
  • Pour batter into prepared tin.
  • Sprinkle over the topping mix.
  • Bake at 350'F/180'C for approx 40-45 minutes or until the sides of cake shrink from the edge of the tin and the centre springs back when pressed lightly.
  • Serve hot, warm, reheated or cold with whipped cream and/or custard as a dessert or cold in lunchbox.

2 tablespoons unsalted butter
1 box chocolate cake mix, plus additional ingredients for making the cake
1 store-bought 8-inch apple pie
8 ounces bittersweet chocolate chips
1 cup heavy cream
1 tablespoon dark rum
Kosher salt
1 cup chopped pecans

Steps:

  • For the chocolate apple pie cake: Preheat the oven to 350 degrees F.
  • Use the butter to grease the bottom and sides of a 9-inch cake pan or springform pan. Cut out a circle of parchment paper to fit the pan and place it on the bottom.
  • In a large bowl, prepare the cake batter as instructed on the box. Pour 1 cup of the batter into the cake pan and spread it out. Add the apple pie on top of the cake batter, then pour the rest of the cake batter over the top and around the sides. Spread it to make sure there are no air pockets.
  • Bake the cake until a toothpick inserted in the center and around the edges comes out clean, 50 to 55 minutes. Remove to a rack to cool slightly. When cool enough to handle, turn the cake out onto the rack, peel off the parchment paper and allow to cool completely.
  • For the ganache: Pour the chocolate chips into a medium bowl. In a small pot on medium heat, add the heavy cream, rum and a pinch of salt and whisk until warm. Pour over the bowl of chips and allow to sit and soak in for 2 minutes. Whisk to melt the chocolate completely.
  • Place the cake on a serving platter, pour the ganache in the center and spread gently outward over the edges. Sprinkle with the pecans and serve.

2 tablespoons softened butter
1 McIntosh apple, diced
