MAPLE, APPLE & PECAN CAKE

Maple, apple & pecan cake image

This maple, apple and pecan cake with apple sauce has a beautiful texture. It makes a perfect centrepiece dessert for the dinner table

Provided by Diana Henry

Categories     Afternoon tea, Dessert, Treat

Time 1h10m

Number Of Ingredients 14

115g butter , at room temperature
75g light brown soft sugar
75ml maple syrup (the darkest you can find)
1 large egg , at room temperature, lightly beaten
225g plain flour , sifted
1½ tsp bicarbonate of soda
1 tsp baking powder
100g pecans , chopped
225g apple purée
125g butter
290g golden icing sugar
4 tbsp dark maple syrup
30g pecans
1 tbsp soft light brown sugar

Steps:

  • To make the apple purée, cook 250g peeled and chopped cooking apples with a splash of water in a pan with a lid until soft for about 10 mins. Purée with a hand blender or in the small bowl of a food processor.
  • Butter and line the base of a 20cm springform cake tin with parchment. Heat oven to 180C/160C fan/gas 4. Beat the butter and sugar until light and fluffy. Mix the maple syrup and egg together and gradually add them. Sift the flour with the bicarb and baking powder. Add a good pinch of salt and the nuts. With a large metal spoon, fold the flour into the butter and sugar, alternating with the apple purée. Scrape the batter into the prepared tin. Bake for 40 mins, or until a skewer inserted into the centre comes out clean. Cool in the tin, then turn out onto a rack and peel off the baking parchment.
  • To make the buttercream, beat the butter until soft, then add the icing sugar and beat until smooth. Gradually add the maple syrup, beating as you do so. Slice the cooled cake in half then, using a spatula, spread half of the icing over the first layer. Add the other layer on top, then top with the rest of the buttercream. Pulse the pecans in a food processor with the brown sugar (or finely chop and mix). You should end up with a coarse mixture. Scatter this over the top of the cake.

Time 30m

Yield 1 cake, 12 serving(s)

Number Of Ingredients 9

1 (18 ounce) box butter pecan cake mix
3 eggs (or as called for by your cake mix)
1/3 cup oil (or as called for by your cake mix)
1 1/3 cups water (or as called for by your cake mix)
1 (6 ounce) box vanilla instant pudding mix
1 cup milk (I use skim, but you can use what you like)
12 ounces Cool Whip (I use fat-free, but you choose)
1 1/2-2 cups of chopped pecans (I toast them for a few minutes-which is optional)
1 teaspoon vanilla

Steps:

  • Preheat oven to 350°F.
  • Mix the cake mix as directed on box (do not overbeat).
  • Bake in three layers (approximately 20 minutes) in greased and floured pans.
  • Cool in pans for 10 minutes then remove to rack and cool completely before frosting.
  • Mix the pudding and milk together until it starts to thicken. Fold in the Cool Whip.
  • Add the nuts and vanilla.
  • Frost the cake This makes a lot of icing so be generous between the layers and icing the cake. Store in the refrigerator.

Tips:

  • Use fresh, crisp apples: This will ensure that your cake is moist and flavorful. If your apples are too soft, they will turn to mush when baked.
  • Don't overmix the batter: Overmixing the batter will make your cake tough. Mix just until the ingredients are combined.
  • Bake the cake at the right temperature: The ideal temperature for baking this cake is 350 degrees Fahrenheit. If you bake the cake at a higher temperature, it will brown too quickly and the inside will be undercooked.
  • Let the cake cool completely before frosting it: This will help the frosting to set properly and prevent it from sliding off the cake.

Conclusion:

This apple pecan cake is a delicious and easy-to-make dessert that is perfect for any occasion. The moist and flavorful cake is studded with apples and pecans, and the cream cheese frosting is the perfect finishing touch. With a few simple tips, you can make this cake like a pro. So next time you're looking for a delicious and easy dessert, give this apple pecan cake a try.
