A very rich, creamy, and zesty cheese and pasta recipe. Not for the dieters out there! The salad dressing adds a very nice creaminess and a little 'bite'!

1 (16 ounce) package uncooked rigatoni pasta
¼ cup butter
1 clove garlic, crushed
½ cup cubed sharp Cheddar cheese
½ cup cubed Gouda cheese
¼ cup grated Parmesan cheese
¼ cup blue cheese dressing
½ cup milk
paprika to taste
salt and pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil, and cook the rigatoni pasta 8 to 10 minutes, until al dente. Drain, and return pasta to the pot.
  • In the pot with the pasta, mix the butter, garlic, Cheddar cheese, Gouda cheese, and Parmesan cheese. Cook and stir over low heat. Be careful not to have too much heat, as the cheese will get stringy. Gradually mix in the blue cheese dressing and milk. Continue to cook and stir until the pasta is well coated. Season with paprika, salt, and pepper.

I couldn't think of anything I wanted on a cold winter day. I was all by myself so this comfort food was made for only 1 person. Feel free to pick the frozen veggies that you like. I like crunch so added some French's Fried Onions. It definately hit the spot (a very generous serving). I think I will try an expanded version for the family soon.

1/2 cup pasta (I used small shells)
1/2 cup frozen peas and carrot
2 teaspoons butter (or margarine)
2 ounces Velveeta cheese
1/4 cup milk
salt and pepper (to taste)
2 -3 tablespoons French's French fried onions (optional)

Steps:

  • Cook the pasta for 4 minutes.
  • Add the frozen veggies and continue cooking for another 4 minutes after it returns to a boil. (Cook until the pasta is the way you like it).
  • Drain the water from the pot.
  • Add the butter and velveeta cheese.
  • Add the milk and stir until cheese has melted.
  • Pour into a serving bowl and top with the onions. (optional).
  • Enjoy!

1 lb ground beef
1 can tomato, diced (15 oz - 425g)
1 can whole kernel corn, (15 oz - 425g)
1 can tomato sauce, (15 oz - 425g)
2 cups water
1 package taco seasoning
salt, to taste
pepper, to taste
2 cups elbow macaroni, uncooked
1 ½ cups colby jack cheese

Steps:

  • In a large quart pot over medium-high heat brown the ground beef. Drain fat and return beef to the pot.
  • Add taco seasoning, water, diced tomatoes, corn and tomato sauce. Bring to a boil.
  • Add uncooked macaroni and reduce heat to low. Cover and simmer for 10-15 minutes (until pasta is cooked through). Stir occasionally.
  • Remove from heat. Sprinkle cheese on top and cover.
  • Serve once cheese is melted!
  • Enjoy!
