These griddle-baked cookies are the closest I have come to the flavor of old fashioned Sunshine Golden Fruit Bar cookies, which are no longer sold. Yum!

3 1/2 cups flour
1 cup sugar
1 1/2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1 cup shortening
1 egg
3/4 cup milk
1 1/4 cups raisins

Steps:

  • Mix dry ingredients in your largest mixing bowl. Cut in shortening until mealy. Add beaten egg, milk, and raisins; mix until all ingredients are moistened and dough holds together. Dough will be very stiff.
  • Preheat pancake griddle to 350 degrees F. A few drops of water should dance on the surface when hot enough.
  • Roll out dough on floured board to ¼" thick. Cut with pizza wheel, scissors, or 2" cookie cutter.
  • Lightly oil hot griddle. Place cookies on it without crowding. As the bottoms brown, the tops become puffy. Then turn with spatula and brown on the other side.
  • Cool on rack. Makes approximately 4 dozen.

This recipe is from a friend of mine Sandy. It was one of those recipes on a little notecard the kind you get in the mail or in a magazine. Anyway, they are so super easy and really tasty too. I consider these to be a "cheating" cookie because of how easy they are and cheap to make too. They also add color and unique flavors to my cookie trays. Well hope you will try them out.

1 box(es) cake mix (your choice of flavor)
1/4 cup(s) butter, softened
8 ounce(s) cream cheese, softened
- powdered sugar

Steps:

  • Heat oven to 350 degrees.
  • Mix together the softened butter and cream cheese. Blend well. Now add your choice of cake mix. Mix well and then roll into 1/2 inch balls and place on cookie sheet. Bake 7 to 10 minutes. Make sure you look at them when it's 7 minutes because they should be just lightly browned on bottom. Remove and place on cooling rack and sprinkle with powdered sugar.
  • Our favorite is lemon, orange supreme and strawberry cake mixes. I have tried other flavors and the only one that didn't taste well was spice cake mix.
  • I love how super easy these are and everyone really enjoys them. They are super soft and have a hint of flavor to them. ---- I also enjoy how I can add color to my cookie trays with them.
