1/4 cup cold butter
4 oz (half of 8-oz package) cold cream cheese
3 oz cream cheese, well-softened
2 tablespoons sugar
3 tablespoons canned pumpkin (not pumpkin pie mix)
2 teaspoons Gold Medal™ all-purpose flour
1/4 teaspoon pumpkin pie spice

Steps:

  • Heat oven to 350°F. Generously spray bottoms and sides of 24 regular-size muffin cups with cooking spray. Place cookie mix in large bowl. Cut in butter and 4 oz cream cheese, using pastry blender or fork, until mixture is crumbly. (Do not overmix.) Reserve 1 cup cookie mixture for topping; set aside. Firmly press 2 tablespoons remaining cookie mixture evenly into bottom of each muffin cup.

1 whole package of Trader Joe's Pumpkin Bread Mix
1 cup earth balance(a healthy butter substitute)
1/2 Tb spoon sugar
1 egg
1 tsp vanilla

Steps:

  • Bring earth balance(butter/vegetable spread) to room temperature. Preheat oven to 400 degrees. Mix butter,sugar, vanilla and egg in a large bowl until smooth. Slowly pour in Trader Joe's pumpkin bread flour and mix into a dough. Roll the dough along the inside of the bowl to form a large ball. Cover the bowl, and chill the dough for atleast an hour. Come back, and shape the dough into tablespoon sized small lumps. ( approx. 1/3 of the dough will make 12 cookies) Place on a cookie sheet about 2 inches apart, and bake 10-15 minutes. This will make them brown on the bottom, crunchy around the edges and soft in the middle.
