ADEL'S RED WINE STEAK MARINADE
Granddaddy's favorite steak marinade. Can be used with all cuts of beef. I usually reserve 1/2 cup of the marinade, then simmer it down to a syrup, and use it as a sauce for the steaks.

Steps:
- Remove the steak from the refrigerator 30 minutes before cooking. Heat a large heavy-bottomed skillet over medium-high heat. Pat the steak dry and season generously with salt and pepper on all sides. Place the steak, standing up on the strip of fat, in the pan and hold it with tongs until the fat renders and the pan is slick, about 2 minutes.
- Place the steak flat in the pan and sear until deep brown on one side, 4 to 5 minutes. Turn and cook on the other side until a thermometer inserted sideways into the thickest part registers 120 degrees for medium-rare, 3 to 4 more minutes. Transfer to a cutting board and let rest 10 minutes. Reserve the drippings in the skillet.
- Add the shallot to the drippings and cook over medium heat until golden, about 2 minutes. Add the wine and scrape up any browned bits with a wooden spoon. Bring to a boil and cook until reduced by half and slightly syrupy, about 7 minutes; remove from the heat. Whisk in the butter, one piece at a time, to make a glossy sauce. Add 1/2 teaspoon salt and 1/4 teaspoon pepper or season to taste. Slice the steak against the grain and serve with the sauce.

DAD'S SIMPLE STEAK MARINADE
This recipe is one my father taught me. It is the simplest homemade marinade! Just 5 common ingredients! When used overnight, the soy sauce, Worcestershire sauce, and garlic make flank, skirt and sirloin steaks flavorful and, most importantly, tender for the grill! For more flavor, add Kosher salt and cracked black pepper to your steak while it cooks. Red wine vinegar or balsamic vinegar may be substituted for the red wine.

RED WINE VINEGAR MARINADE
Always marinate food in refrigerator; never at room temperature. Allow 1/4 to 1/2 cup of marinade for each 1 to 2 lbs. of meat. For tenderization to take place, beef must be marinated at least 6 hour or longer. Marinating longer than 24 hours causes the meat fibers on the surface to break down, resulting in a "mushy" texture. Remaining marinade may also be served as a sauce with the grilled meat or poultry. It should be heated to the boiling point before serving, if not using as a sauce it should be discarded.

Steps:
- Arrange the steaks in a shallow glass or ceramic dish.
- In a medium bowl, whisk together the red wine, olive oil, garlic, bay leaves, and salt and pepper to taste.
- Pour the mixture over the steaks and turn the steaks over to coat them with the marinade.
- Cover and refrigerate for at lease 1 hour or up to 4 hours To grill the steaks; Preheat the grill to medium hot or preheat the broiler.
- Pour off the marinade from the meat and discard.
- Pat the steaks dry with paper towles.
- Lightly brush the steaks on both sides with some olive oil.
- Place them directly over the hot coals and grill for 18-22 minutes for medium-rare, (20-24 for medium) or until done to your taste.
- Turn them once and brush with additional olive oil.
- *Ifyou are broiling, place the steaks on the rack of a broiler pan and broil 4 inches from the heat source for 8-10 minutes for medium rare, 12-14 to medium, etc.
- Season with salt and pepper and serve immediately on a warm platter.
Tips:
- Use a good quality red wine for the marinade. A dry red wine, such as Cabernet Sauvignon or Merlot, will work well.
- Don't over-marinate the steak. The longer the steak marinates, the more tender it will become, but if you marinate it for too long, it can become mushy.
- Bring the steak to room temperature before cooking. This will help it cook evenly.
- Cook the steak over medium-high heat. This will help to sear the outside of the steak and keep the inside juicy.
- Let the steak rest for a few minutes before slicing. This will help the juices redistribute throughout the steak and make it more tender.
Conclusion:
Red wine steak marinade is a simple and delicious way to add flavor to your steak. It's perfect for a special occasion or a weeknight meal. With just a few ingredients and a little bit of time, you can create a steak that is sure to impress your family and friends.
