Provided by Michelle Wardingley

Categories     Desserts

Yield Serves 4

Number Of Ingredients 11

450g/1lb cooking apples, peeled, cored and sliced
15g/1/2oz butter
85g/3oz sugar
½ lemon, juice and zest
115g/4oz flour
pinch salt
½ tsp baking powder
55g/2oz butter, softened
55g/2oz sugar
1 free-range egg
1 tbsp milk

Steps:

  • Preheat the oven to 180C/160C Fan/Gas 4.
  • For the filling, place the apples, butter, sugar and lemon juice and zest in a saucepan with a little water and cook gently until the apples have softened.
  • Put the apple mixture in the bottom of a pie dish, packing the apples down to provide a firm base for the topping (this helps it rise evenly during baking).
  • For the topping, sieve the flour together with a pinch of salt and the baking powder. In a separate bowl, cream together the butter and sugar, beat in the egg and then lightly fold in the flour. Add a little milk if the mixture is too stiff.
  • Pour the mixture on top of the apples and bake in the oven for 45-55 minutes or until the top is golden-brown and cooked through.

CHOCOLATE EVES PUDDING.

Chocolate Eves Pudding. image

Im particularly fond of puddings, and this is one of my favourites, especially as the colder nights are approaching. It's an old traditional recipe but with a little addition that gives it that extra something. This pudding should be a sin! Chocolate Eves Pudding.

Provided by Ken5664

Categories     Dessert

Time 1h

Yield 3-4 serving(s)

Number Of Ingredients 8

12 ounces apples
2 ounces sugar
1 clove (or 2 if you like a stronger taste)
2 ounces butter
2 ounces caster sugar
1 egg
2 ounces flour
chocolate (as much or as little chocolate as you want to indulge in!)

Steps:

  • Slice the apples finely.
  • Grease a 1 pint fireproof dish and place half the apples in it. Add the sugar and cloves then place the remainder of the apples on top.
  • Cream the butter and sugar together then add the beaten egg a little at a time. Add the sifted flour to this mixture and mix well.
  • Grate as much of a good quality chocolate bar as you wish into the mixture and mix well again.
  • Spread over apples and bake until the sponge is firm and lightly browned.
  • Serve directly from the dish and enjoy! If you're not serving it to the kids, you may wish to substitute the chocolate for chocolate liqueur.
  • How much you use is again, entirely up to you!

Tips:

  • Choose the right ingredients: Use high-quality, fresh ingredients for the best results, especially the suet, breadcrumbs, and spices.
  • Don't overmix the batter: Overmixing can make the pudding tough. Mix just until the ingredients are combined.
  • Let the pudding rest: After mixing the batter, let it rest for at least 30 minutes. This will allow the flavors to meld and the suet to soften.
  • Steam the pudding properly: Make sure the steamer is large enough to accommodate the pudding and has a tight-fitting lid. Steam the pudding for the recommended amount of time, checking it regularly to ensure it is cooking evenly.
  • Serve the pudding warm: Eve's pudding is best served warm, with a dollop of custard or cream.

Conclusion:

Eve's pudding is a delicious and traditional Christmas dessert that is sure to impress your friends and family. With its rich, fruity flavor and moist, dense texture, it is a perfect way to end a festive meal. Follow these tips to make the best Eve's pudding possible.
