FENNEL, RED ONION, AND PARSLEY SALAD

Fennel, Red Onion, and Parsley Salad image

Fennel gives this salad its signature crunch and lends a sweetness to balance the red onions and parsley.

Provided by Martha Stewart

Categories     Food & Cooking     Salad Recipes

Time 15m

Number Of Ingredients 7

1 cup loosely packed fresh flat-leaf parsley leaves
1 medium fennel bulb, trimmed, halved lengthwise, and thinly sliced
1 small red onion, halved lengthwise and thinly sliced into half-moons
3 tablespoons fresh lemon juice
1 tablespoon extra-virgin olive oil
1/2 teaspoon celery seeds
Coarse salt and freshly ground pepper

Steps:

  • Prepare a large ice-water bath. Put parsley, fennel, and onion in a colander, and set in ice-water bath. Let soak 10 minutes.
  • Drain, and transfer to a salad spinner. Spin until dry, and transfer to a serving bowl. Add lemon juice, oil, and celery seeds; toss to combine. Season with salt and pepper.

Tips:

  • Choose a ripe, firm fennel bulb. The bulb should be heavy for its size and have a tight head of fronds.
  • Use a sharp knife to thinly slice the fennel and cucumber. This will help the vegetables retain their crispness.
  • If you don't have a mandoline, you can use a food processor fitted with a slicing disc to slice the fennel and cucumber.
  • Soak the red onion in cold water for 10 minutes before adding it to the salad. This will help to remove the sharp flavor.
  • Use a good quality olive oil and vinegar for the dressing. This will help to bring out the flavors of the vegetables.
  • Season the salad to taste with salt and pepper. You can also add a pinch of red pepper flakes for a little spice.
  • Serve the salad immediately or chill it for later. The salad will keep in the refrigerator for up to 3 days.

Conclusion:

Fennel, cucumber, and red onion salad is a refreshing and flavorful salad that is perfect for a summer meal. The salad is easy to make and can be tailored to your own taste preferences. You can add other vegetables, such as tomatoes or bell peppers, to the salad. You can also use a different type of dressing, such as a vinaigrette or a yogurt-based dressing.
