3 small zucchini, about 3/4 pound
3 quarts water
Salt to taste
3/4 pound fettuccine
2 tablespoons olive oil

2 cups cubed ripe plum tomatoes
1/4 teaspoon hot red pepper flakes
Freshly ground pepper to taste
1/2 cup coarsely chopped fresh basil leaves
1/4 cup freshly grated Parmesan or peccorino cheese, optional

Steps:

  • Peel and devein the shrimp.
  • Trim the ends of the zucchini and slice them thin, about 1/8 inch thick.

Steps:

  • Begin preparing fettuccine according to package directions. Preheat oven to 350 degrees. In a large skillet, melt butter. Add onions and saute until clear over medium heat.
