4 (4 ounce) cod fillets
3 medium potatoes, peeled and sliced
¼ cup water
¼ cup lemon juice
3 tablespoons olive oil
3 tablespoons chopped fresh dill
2 tablespoons chopped fresh parsley
2 cloves garlic, minced
1 teaspoon Dijon mustard
1 teaspoon ground cumin
1 teaspoon salt
1 teaspoon ground black pepper

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place cod and potatoes into the bottom of a baking dish (such as Pyrex®).
  • Mix water, lemon juice, oil, dill, parsley, garlic, Dijon mustard, cumin, salt, and pepper together in a bowl and add to the fish and potatoes. Cover the dish with aluminum foil.
  • Bake in the preheated oven until potatoes are tender, about 35 minutes. Remove foil and continue to bake for 10 minutes more.

4 fish fillets (turbot, sole, flounder or red snapper)
16 asparagus spears
2 shallots
2 tablespoons unsalted butter
3/4 to 1 cup heavy cream
1 teaspoon turmeric
Juice 1/2 lemon
Coarse salt and freshly ground white pepper to taste
2 tablespoons blanched chopped lemon rind

Steps:

  • Slice the fish fillets into pieces about two-and-a-half inches by one-and-a-half inches (four pieces per fillet).
  • Steam the asparagus. While it is cooking, soften the shallots in the butter. Saute the fillets a few at a time, so that they are barely cooked. Do not break when you remove them with a slotted spoon. Keep warm in a very low oven.
  • Drain the asparagus spears and keep warm.
  • Add the cream, turmeric and lemon juice to the pan in which you have sauteed the fish fillets. Bring to a boil. Add any juices that have collected under the fish fillets. Simmer until thickened, stirring, season with salt and pepper and add the lemon peel. Arrange the fillets on individual plates. Pour the sauce on top, garnish with asparagus and serve.

1 teaspoon butter, or as needed
2 pounds cod fillets
¾ cup freshly grated Parmesan cheese
⅓ cup butter, softened
¼ cup mayonnaise
¼ cup chopped green onion
3 tablespoons lemon juice
2 teaspoons dried dill weed
¼ teaspoon salt
¼ teaspoon ground black pepper
2 dashes hot pepper sauce (such as Tabasco®)

Steps:

  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil; lightly coat with about 1 teaspoon butter.
  • Lay fish in a single layer on the prepared baking sheet.
  • Mix Parmesan cheese, 1/3 cup butter, mayonnaise, green onion, lemon juice, dill, salt, black pepper, and hot sauce together in a bowl.
  • Broil fish in the preheated oven until it flakes easily with a fork, 7 to 8 minutes. Gently spread Parmesan cheese mixture over fish; return to oven and broil until topping is bubbling and lightly browned, about 2 more minutes.

1 cup dry white wine
1/2 cup lemon juice
2 tablespoons minced garlic
1 tablespoon shallot, minced
1 teaspoon salt
1/4 teaspoon black pepper
1 dash Worcestershire sauce
1 dash hot pepper sauce
1/2 cup heavy cream
1 cup butter, room temperature (2 sticks)
1/2 tablespoon paprika
1/2 tablespoon salt
1/2 tablespoon garlic powder
1/4 tablespoon black pepper
1/4 tablespoon onion powder
1/4 tablespoon cayenne pepper
1/4 tablespoon dried oregano
1/4 tablespoon dried thyme
2 lbs flounder fillets (or cod)
1/2 cup flour (or 1/2 cup panko mixed with 2 tablespoons finely chopped almonds)
2 tablespoons olive oil
fresh parsley, for garnish

Steps:

  • LEMON BUTTER SAUCE: Heat a large skillet over high heat. Add the wine, lemon juice, garlic, and shallots. Cook for 3 minutes.
  • Stir in the salt, pepper, Worcestershire, and hot sauce and simmer until the mixture is somewhat syrupy, about 3 minutes.
  • Stir in the cream and cook for 1 minute. Over low heat, whisk in the butter a few pats at a time. Continue whisking until all of the butter is incorporated into the sauce. Serve immediately or keep warm until ready to use.
  • FISH: Mix fish spice blend ingredients together. Season both the fish and flour with spices and dredge the fish in the seasoned flour or panko/almond mixture, coating completely.
  • In a large saute pan, heat the olive oil. Add the fish to the saute pan, pan-frying for about 4 minutes on each side.
  • SERVE: Drizzle some lemon butter sauce on each plate. Top with fish and drizzle more sauce over top of fish. Top with fresh parsley.

1 head garlic (approx 9 cloves)
2 tablespoons butter
2 teaspoons flour
2 tablespoons lemon juice
1/4 cup milk

Steps:

  • When I originally wrote this recipe, I really didn't think about the garlic much. I was using peeled garlic. If you use a head of garlic, do yourself a favor: Cut the head in half across the grain, and either use a garlic roaster, or wrap the head in foil tightly and bake for an hour at 250; That will loosen the cloves, and roasting will impart more flavor. Just squeeze each clove into the pan. OR (original instruction) mince the garlic until it's very fine.
  • Melt the butter in a small pan.
  • Add the minced garlic. brown the mixture.
  • Add the flour and whisk to form a roux.
  • Add the lemon juice and milk. Continue whisking until the sauce is smooth.
  • Hey! you're done! Pour a bit over your fish and enjoy!

Steps:

  • On plate, mix flour, lemon-pepper and salt. On second plate, place bread crumbs. In bowl, beat eggs with fork. Coat fish with flour mixture. Dip into eggs; coat well with bread crumbs.
  • In 12-inch nonstick skillet, heat oil over medium heat. Add fish; cook 3 minutes. Carefully turn fish over. Cook about 3 minutes longer or until fish flakes easily with fork.
