Dry Rub:
2 tablespoons light brown sugar
1 tablespoon ancho chile powder
1 tablespoon paprika
2 teaspoons kosher salt
2 teaspoons freshly ground black pepper
1 teaspoon cayenne pepper
1 teaspoon granulated garlic
1 teaspoon English mustard powder
1/2 teaspoon ground coriander
1/2 teaspoon ground cumin
Steak and Salsa:
2 tablespoons olive oil, plus more for grill
3 ears of corn, shucked
1/4 red onion, finely chopped
1 jalapeño, seeds removed, finely chopped
1 pint cherry tomatoes, halved
1 cup fresh cilantro, coarsely chopped
1/3 cup fresh lime juice
Kosher salt, freshly ground pepper
1 1/2 pound flank steak

Steps:

  • Dry rub:
  • Combine brown sugar, chile powder, paprika, salt, pepper, cayenne, granulated garlic, mustard powder, coriander, and cumin in a small bowl.
  • Steak and salsa:
  • Prepare a grill for medium-high heat; oil grate. Grill corn, turning occasionally, until lightly browned all over, 8-10 minutes; let cool. Cut kernels from cobs and place in a medium bowl. Add onion, jalapeño, tomatoes, cilantro, and lime juice to corn and toss to combine; season with salt and pepper. Set salsa aside.
  • Meanwhile, coat steak with all of dry rub, packing on more than once if needed, and drizzle with 2 tablespoons oil to help rub adhere. Grill steak, turning occasionally and moving to a cooler spot on grill as needed to control flare-ups, until nicely browned and an instant-read thermometer inserted into the thickest part registers 130°F, about 4 minutes per side for medium-rare. Transfer to a cutting board and let rest 10 minutes.
  • Return steak to grill just to recrisp exterior, about 1 minute per side. Transfer back to cutting board and slice against the grain. Serve topped with salsa.
  • Do Ahead
  • Salsa can be made 1 day ahead. Cover and chill.

Provided by Robin Miller : Food Network

Categories     main-dish

Time 35m

Yield 4 servings

Number Of Ingredients 16

6 1/2 cups low-sodium chicken broth
3 cups Arborio rice
Cooking spray
1 pound lean flank steak
Salt and ground black pepper
Mesquite seasoning
2 red bell peppers, seeded and sliced into rounds
2 teaspoons sesame oil
2 cloves garlic, minced (or 2 teaspoons of pre-minced garlic in a jar)
2 teaspoons minced fresh ginger
1 (16-ounce) package frozen shelled edamame, thawed
2 tablespoons reduced-sodium soy sauce
1/4 cup rice wine vinegar
3 tablespoons canola oil
2 teaspoons country-style Dijon mustard
1 teaspoon wasabi paste

Steps:

  • Bring the chicken stock to a boil. Add 3 cups Arborio rice. Cover and simmer for 20 minutes. Allow rice to cool and reserve it for meals later in the week.
  • While rice is cooking, coat a large stove-top grill pan or griddle with cooking spray and set over medium-high heat to preheat. Season both sides of flank steak with salt, black pepper and mesquite seasoning. Place flank steak on hot grill along with the red pepper rounds. Cook the steak 3 to 5 minutes per side, until almost cooked through but still slightly pink. Cook the red peppers until slightly charred. Remove and set aside. Remove steak from grill pan and let rest 10 minutes before slicing crosswise on a diagonal into 1/2-inch thick slices.
  • Meanwhile, heat sesame oil in a large skillet over medium heat. Add garlic and ginger and cook 1 minute. Add edamame and soy sauce and cook 2 to 3 minutes, until golden brown, stirring frequently. Remove from heat.
  • In a small bowl, whisk together rice vinegar, oil, mustard, and wasabi paste.
  • Arrange flank steak slices and red pepper rounds on a serving platter. Top with half of the sauteed edamame (reserve remaining edamame for Edamame-Rice Salad with Teriyaki Tuna). Spoon wasabi dressing over edamame and steak. Serve with 2 cups of the rice. Reserve remaining rice for Asparagus-Wild Mushroom Risotto with Parmesan and Edamame-Rice Salad with Teriyaki Tuna.

Tips:

  • Tenderizing the flank steak before cooking helps break down the tough fibers and results in a more tender and flavorful steak. You can tenderize the steak using a meat mallet, a fork, or a sharp knife to make small incisions in the meat.
  • The wasabi rub adds a unique and spicy flavor to the steak, but you can adjust the amount of wasabi according to your taste preference. If you don't like spicy food, you can reduce the amount of wasabi or omit it altogether and use a different spice rub.
  • Cook the steak over high heat to quickly sear the outside and lock in the juices, resulting in a juicy and flavorful steak. Make sure the grill or pan is very hot before adding the steak and avoid overcrowding the pan to ensure even cooking.
  • Resting the steak for a few minutes before slicing allows the juices to redistribute throughout the meat, resulting in a more tender and flavorful steak. Cover the steak loosely with foil and let it rest for 5-10 minutes before slicing and serving.

Conclusion:

This flank steak with wasabi rub is a delicious and easy-to-make meal that is perfect for a weeknight dinner or a special occasion. The combination of the tender flank steak, the spicy wasabi rub, and the flavorful marinade creates a dish that is sure to impress. Serve the steak with your favorite sides, such as grilled vegetables, mashed potatoes, or a fresh salad, for a complete and satisfying meal. Whether you are a seasoned grill master or a beginner, this recipe is sure to become a favorite in your kitchen.
