1 large bunch broccoli (about 1 1/2 pounds), cut into florets, stalks peeled and thinly sliced
1/4 cup olive oil, plus more for drizzling
1/4 teaspoon red pepper flakes, plus more to taste

1 pint red and yellow grape tomatoes, halved
1 clove garlic, minced
6 naan flatbreads
1 1/2 pounds fresh mozzarella, thinly sliced
3 tablespoons chopped pitted green olives
3 tablespoons salted roasted pepitas

Steps:

  • Preheat the oven to 425 degrees F.
  • Toss the broccoli with 3 tablespoons olive oil and the red pepper flakes on a rimmed baking sheet. Sprinkle with salt and pepper.
  • Mix the tomatoes with the garlic in a small bowl. Sprinkle with salt and pepper.
  • Roast the broccoli until it begins to turn brown, 16 to 18 minutes. Add the tomatoes to the baking sheet, then toss with the broccoli and roast until tender, about 6 minutes.
  • Meanwhile, divide the flatbreads between 2 baking sheets. Top with the mozzarella, leaving a 1-inch border, then top with the broccoli and tomatoes. Sprinkle with the olives and pepitas. Brush the edges of the breads with the remaining tablespoon olive oil.
  • Bake until the mozzarella is melted and the flatbreads are very warm, about 8 minutes. Drizzle a little olive oil on the tops and sprinkle with more red pepper flakes if you like it spicy. Cut into wedges and serve.

Steps:

  • For the flatbread: In a small mixing bowl, add the self-rising flour, yogurt, olive oil, rosemary and salt and mix. It might seem like the consistency is sticky, but this is okay!
  • Dust a bench top with more of the flour and knead the dough until it forms a ball. If it's still sticky, add more flour to the bench. Roll out the dough with a rolling pin until 1/2 centimeter (1/4 inch) in thickness.

1/2 cup cider vinegar
1/2 cup chopped green onions, divided
1/2 cup minced fresh cilantro, divided
2 pounds fresh beef brisket
1 teaspoon salt
1 teaspoon pepper
1 large red onion, cut into thick slices
1 teaspoon olive oil
2 cups shredded smoked Gouda cheese
DOUGH:
2-3/4 to 3-1/4 cups all-purpose flour
1 tablespoon sugar
3 teaspoons salt
1 package (1/4 ounce) quick-rise yeast
1-1/4 cups warm water (120° to 130°)
2 tablespoons olive oil

Steps:

  • In a large resealable plastic bag, combine 1 cup barbecue sauce, vinegar, 1/4 cup green onions and 1/4 cup cilantro. Sprinkle brisket with salt and pepper; add to bag. Seal bag and turn to coat. Refrigerate for 8 hours or overnight., Drain and discard marinade. Prepare grill for indirect heat, using a drip pan. Place brisket over pan; grill, covered, over indirect low heat for 1 hour. 1 lb boneless skinless chicken thighs, chopped into bite-size pieces

1/2 cup Frank's red hot sauce
4 bread rounds (flatbread rounds)
3 celery ribs, thinly sliced on a bias
3/4 cup monterey jack cheese, shredded
1/4 cup blue cheese, crumbles

Steps:

  • Preheat oven to 450 degrees F.
  • Place a large skillet over medium-high heat with 2 T olive oil.
  • Season the chicken pieces with salt and ground black pepper, and add them to the preheated skillet.
  • Saute until cooked through and golden brown, 4-5 minutes.
  • Reduce the heat to medium and add the butter to the skillet to melt.

It is also Weight Watchers friendly- the version I made was 11 points per serving, using the leanest ground beef and low fat yoghurt. The last ingredient should read "4 garlic and coriander MINI naan breads" but Recipezaar could not recognise it- these naan breads are about the size of a hand and should be garlic and coriander flavour as plain ones just don't give the same flavour!

1 tablespoon fresh parsley leaves
1 lb fresh ground beef or 1 lb fresh ground lamb
2 teaspoons ground cumin

1 1/2 teaspoons paprika

1/2 cup plain natural yoghurt (can use Greek)
4 naan bread (garlic and coriander, should not be plain naan breads)

Steps:

  • Preheat the oven to 350°F or 180°C.
  • Finely dice the red onion and finely chop the fresh parsley and set aside.
  • In a non-stick skillet, cook the ground beef or lamb for 2 minutes, mashing it into smaller pieces with a spatula.
  • Add the red onion, cumin, pine nuts, paprika and lemon juice.
  • Cook the beef or lamb mixture until the meat is completely cooked, about 10 minutes.
  • Meanwhile, spread all but 3 tablespoons of the yoghurt onto the four naan breads, as you would spread tomato sauce on a pizza and put in the oven to warm through for 5 minutes.
  • Remove the meat mixture from the heat and stir through the remaining 3 tablespoons of yoghurt.
  • Remove the naan breads from the oven. Share the meat mixture between the naan breads and put back in the oven for 5 minutes (don't leave it in the oven for too long as the meat would dry out and fall apart on the plate).
  • Remove from the oven, scatter with the fresh parsley and serve.
