BOURBON FRIED APPLES

Bourbon Fried Apples image

This is a slightly healthier spin on traditional fried apples. The skin is left on, and the reduced butter and sugar are offset with flavor-boosting bourbon, raisins, cinnamon, and lemon juice. I use Cameos for this recipe, as they are naturally sweet and hold their shape well, but if you're using a tarter variety, you may wish to increase the brown sugar and omit the lemon juice. Golden rum can substitute for the bourbon.

FRIED APPLES'N'ONIONS (LITTLE HOUSE)

Fried Apples'n'onions (Little House) image

This is a traditional "country" dish. Sugar is optional, but I think it's better with it. Try this for breakfast with fried potatoes. This recipe came from "The Little House Cookbook" by Barbara M Walker, and the food featured in "Farm Boy."

Provided by Sascha

Categories     Breakfast

Time 15m

Yield 4 serving(s)

Number Of Ingredients 4

1/2 lb sliced bacon or 1/2 lb salt pork
6 yellow onions (2 pounds)
6 tart apples (2 pounds)
2 tablespoons brown sugar

Steps:

  • Fry bacon or salt pork slices in a skillet until brown and crisp. Set them aside on a warm serving platter.
  • While the meat is frying, peel the onions and slice them as thinly as possible.
  • Core the apples and cut them crosswise in circles about 1/4 inches thick. Apple skins help the slices keep their shape and add color to the dish, so don't peel unless the skins are tough or scarred.
  • Drain all but 1 tablespoon of fat from the skillet, then add the onion slices. Cook them over medium high heat for about 3 minutes.
  • Cover with apple slices in an even layer. Sprinkle brown sugar over all, cover the skillet, and cook until tender, a few minutes more. Stir only to prevent scorching.
  • Remove to the warm plate with the bacon or salt pork slices and serve.

SKILLET-FRIED BALSAMIC APPLES AND SWEET ONION

SKILLET-FRIED BALSAMIC APPLES AND SWEET ONION image

Categories     Salad     Fruit     Side     Sauté

Yield 4 servings

Number Of Ingredients 5

3 tablespoons butter
2 large sweet onions, sliced
5 large Granny Smith apples, peeled and sliced (about 2 1/4 lb.)
2/3 cup firmly packed light brown sugar
1/4 cup balsamic vinegar

Steps:

  • Melt butter in a large skillet over medium-high heat; add onions, and sauté 5 minutes. Add apples, brown sugar, and balsamic vinegar, and sauté 15 to 20 minutes or until apples are tender.

Tips:

  • Choose the right apples: For frying, it's best to use firm, tart apples that hold their shape well, such as Granny Smith, Honeycrisp, or Braeburn.
  • Slice the apples evenly: This will help them cook evenly. Use a sharp knife to cut the apples into thin, uniform slices.
  • Use a large skillet: This will give the apples plenty of room to cook without overcrowding.
  • Don't overcrowd the skillet: If you overcrowd the skillet, the apples will steam instead of fry and won't get crispy.
  • Cook the apples over medium heat: This will prevent them from burning.
  • Stir the apples occasionally: This will help them cook evenly.
  • Don't overcook the apples: They should be tender but still have a bit of a bite to them.
  • Serve the apples immediately: They are best enjoyed warm and fresh out of the skillet.

Conclusion:

Fried apples are a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. They are also a great way to use up leftover apples. With so many different recipes to choose from, there's sure to be a fried apple recipe that everyone will enjoy.
