FRIED CABBAGE AND KIELBASA
This recipe works well for many occasions. This is also the type of recipe that you can add to or build on to make your own. If you aren't too crazy about the taste of cabbage, keep in mind that the onion, bacon drippings, and kielbasa seems to tone down that cabbage-y taste a bit, and you can also add other things or spices to tone it down.

Steps:
- 1. Chop up the kielbasa and place in pam sprayed cast iron skillet or whatever pan you use. Turn to medium heat and stir occasionally to brown on all sides.
- 2. While meat cooking chop up the all other ingredients and place in another skillet to cook. Add the butter to this skillet and coat all the veggies.
- 3. Turn the heat to medium and add the salt, pepper and other spices, stirring to mix it all over the veggies.Stir often so it won't burn. When done, add to the kielbasa and mix well, cooking on medium heat about five minutes longer to mix all the flavors together.
- 4. Serve with cottage cheese and tomato salad with a roll. The flavor between the cold salad and hot main dish is terrific. Add my whole wheat cranberry, pecan muffin and you have a complete coarse for supper. As always, you may not always use same amount of spices as I do. Taste as you cook..

Steps:
- 1. slice kielbasa and add to non stick frying pan. you can add a small amount of oil if needed. cook kielbasa and onion until onion is soft and meat is lightly browned.
- 2. add cabbage, potatoes, and broccoli in layers ending with cabbage on top.salt and pepper to taste. I also add some Cajun seasoning as my family likes a little spice.Add 1 1/2 cups of water. Cover and simmer until vegatables are tender. You may drain excess water before browning vegatables slightly. Sprinkle shredded cheese on top and cover. serve when cheese has melted.
Tips:
- Use fresh, high-quality ingredients. Fresh cabbage will have a tight head and bright green leaves. Kielbasa should be firm and evenly colored.
- Slice the cabbage thinly. This will help it cook evenly and quickly.
- Brown the kielbasa before adding the cabbage. This will help to develop its flavor.
- Cook the cabbage over medium-high heat. This will help it to caramelize and develop a slightly crispy texture.
- Season the cabbage to taste. Salt, pepper, garlic powder, and onion powder are all good options.
- Serve the cabbage and kielbasa immediately. This dish is best when served hot.
