RED CABBAGE AND FRUIT SLAW

Red Cabbage and Fruit Slaw image

I grabbed this from an 'Easy Home Cooking' booklet I found at my mother's place on my last visit. It sounded good and I am always happy to find a slaw recipe that doesn't include raw onion since I dislike raw onion so much. When I made this I used fat free mayo and splenda and it worked great. I really liked the colours in the dish. Cooking time includes chilling time.

  • For a sweeter slaw, use a combination of green and red cabbage. Red cabbage is naturally sweeter than green cabbage.
  • To add a bit of crunch, add some chopped nuts or seeds to the slaw. Walnuts, pecans, and sunflower seeds are all good choices.
  • If you want a more creamy slaw, add some mayonnaise or Greek yogurt to the dressing.
  • For a lighter slaw, use a vinegar-based dressing instead of a mayonnaise-based dressing. Apple cider vinegar, rice vinegar, and white vinegar are all good choices.
