Tips:

  • Use high-quality chocolate for the best flavor. A good semisweet or dark chocolate will work well.
  • Chill the cookie dough for at least 30 minutes before baking. This will help the cookies hold their shape and prevent them from spreading too much.
  • Don't overmix the cookie dough. Overmixing can make the cookies tough.
  • Bake the cookies until they are just set around the edges. The centers should still be slightly soft.
  • Let the cookies cool completely before filling them. This will help prevent the filling from melting.
  • Use a piping bag or a plastic bag with a corner cut off to fill the cookies. This will help you get a clean, even filling.
  • If you don't have any fudge, you can use a store-bought chocolate frosting or ganache.
  • Store the cookies in an airtight container at room temperature for up to 3 days.

Conclusion:

Fudge-filled sandies are a delicious and easy-to-make treat that are perfect for any occasion. With their rich chocolate filling and buttery shortbread crust, they're sure to be a hit with everyone who tries them. So next time you're looking for a special dessert, give these cookies a try.
