Time 45m

Yield 4

Number Of Ingredients 8

Vegetable cooking spray
1 ¼ pounds skinless, boneless chicken breast halves
2 cloves garlic, minced
1 ¾ cups Swanson® Chicken Broth or Swanson® Chicken Stock
¾ cup uncooked white rice
1 (16 ounce) package frozen vegetable combination (broccoli, cauliflower, carrots)
⅓ cup grated Parmesan cheese
Paprika

Steps:

  • Spray a 12-inch skillet with the cooking spray and heat over medium-high heat for 1 minute. Add the chicken and garlic and cook for 10 minutes or until the chicken is well browned on both sides. Remove the chicken from the skillet.
  • Stir the broth, rice and vegetables in the skillet and heat to a boil. Reduce the heat to low. Cover and cook for 15 minutes. Stir in the cheese.
  • Return the chicken to the skillet. Sprinkle the chicken with the paprika. Cover and cook for 10 minutes or until the chicken is cooked through and the rice is tender.

Tips:

  • Prep Vegetables and Chicken Beforehand: Before starting the cooking process, wash, peel, and chop the vegetables and chicken into bite-sized pieces. This will save time and ensure that everything cooks evenly.
  • Use a Non-Stick Skillet: To prevent the ingredients from sticking, use a non-stick skillet or wok. If you don't have one, grease the skillet with cooking oil before adding the ingredients.
  • Cook in Stages: Don't overcrowd the skillet with all the ingredients at once. Cook the vegetables and chicken in batches, removing them from the skillet as they become tender. This will ensure that everything cooks properly without steaming or becoming mushy.
  • Season to Taste: Don't be afraid to adjust the seasoning according to your preference. Add more garlic, ginger, soy sauce, or black pepper to create a flavor profile that suits your taste buds.
  • Use Fresh Ingredients: For the best flavor and texture, use fresh vegetables and chicken. Frozen or canned ingredients can be used in a pinch, but they may not provide the same vibrant flavors and crisp textures.

Conclusion:

This garlic chicken, vegetable, and rice skillet is a quick, easy, and flavorful meal that is perfect for busy weeknights. With a combination of tender chicken, crisp vegetables, and fluffy rice, this dish is sure to satisfy your cravings and keep you coming back for more. So gather your ingredients, heat up your skillet, and let's get cooking!
