¼ cup salt
1 bay leaf
1 teaspoon dried thyme
1 teaspoon dried oregano
1 teaspoon dried rosemary
8 cloves garlic, minced

3 tablespoons olive oil, or as needed
1 tablespoon freshly ground black pepper
2 teaspoons red pepper flakes, or to taste
4 pounds chicken wings, separated at joints, tips discarded
2 tablespoons fine bread crumbs
1 cup finely grated Parmigiano-Reggiano cheese, divided

Steps:

  • Preheat an oven to 450 degrees F (230 degrees C). Line a baking sheet with aluminum foil and coat foil with cooking spray.

⅓ cup grated parmesan cheese

Steps:

  • Preheat oven to 300ºF (150°C).

We don't have a Wingstop in our area, so I'll take their word for it! 1/2 cup olive oil, plus more for the grill
1/2 cup packed fresh basil, plus 2 large sprigs
5 large sprigs oregano, halved
8 to 10 sprigs thyme, halved
Kosher salt and freshly ground pepper
5 pounds chicken wings
4 tablespoons unsalted butter, at room temperature
1/4 cup grated parmesan cheese

Steps:

  • Grate the zest of 1 lemon and set aside; juice both lemons. Combine the garlic and olive oil in a large microwave-safe bowl and microwave until the garlic starts sizzling, 1 to 2 minutes; let cool. Add the lemon juice, herb sprigs, 1 teaspoon each salt and pepper, and the chicken wings. Using your hands, rub the wings with the oil mixture; firmly press the wings down, making sure they are covered with some of the herbs and garlic.
