GERMAN MEATBALLS
This is one of our favorite main dishes. Because we raise our own pork and beef, the meat we use is always freshly ground. For variety, these meatballs can be cooked with a sweet cream gravy or steamed with tomatoes. But we prefer them with homemade sauerkraut. -Iona Redemer, Calumet, Oklahoma

GERMAN BLACK WALNUT BALLS
This is an old recipe that my Gramps used to make (Great Grandpa). The cookies are not really sweet, but the flavor is wonderful all the same. It's definitely more of an adult cookie. I am guessing on the servings, so please let me know how many cookies it makes and I will post the correction. (I can't make them anymore with regular wheat flour since I have to make everything gluten free) UPDATE: I asked my mom if she ever substituted anything for the brandy and she said she rarely included it and just increased the vanilla to a tsp.

Tips:
- Use fresh walnuts. Fresh walnuts have a sweeter, more delicate flavor than walnuts that have been stored for a long time. If you can't find fresh walnuts, you can use frozen walnuts that have been thawed and dried.
- Toast the walnuts before using them. Toasting the walnuts brings out their flavor and makes them more fragrant. To toast the walnuts, spread them out on a baking sheet and bake them at 350 degrees Fahrenheit for 10-15 minutes, or until they are fragrant and slightly browned.
- Use a food processor to chop the walnuts. A food processor will chop the walnuts more finely than a knife, which will help to make the black walnut balls smoother.
- Don't overmix the dough. Overmixing the dough will make the black walnut balls tough. Mix the dough just until it comes together.
- Chill the dough before shaping it. Chilling the dough will make it easier to shape and will help to prevent the black walnut balls from spreading too much in the oven.
- Bake the black walnut balls until they are just set. Overbaking the black walnut balls will make them dry and crumbly. Bake the black walnut balls until they are just set, or until a toothpick inserted into the center comes out clean.
Conclusion:
German black walnut balls are a delicious and festive treat that is perfect for any occasion. They are easy to make and can be made ahead of time, making them a great option for busy cooks. With their rich, nutty flavor and decadent chocolate coating, German black walnut balls are sure to be a hit with everyone who tries them.
