1/2 pound lean ground beef (90% lean)
1 can (8-3/4 ounces) whole kernel corn, drained
2/3 cup condensed cream of chicken soup, undiluted
1/2 cup shredded cheddar cheese, divided
1/3 cup 2% milk
2 tablespoons sour cream
3/4 teaspoon onion powder
1/4 teaspoon pepper
2 cups frozen Tater Tots

Steps:

  • Preheat oven to 375°. In a large skillet, cook beef over medium heat until no longer pink. Stir in the corn, soup, 1/4 cup cheese, milk, sour cream, onion powder and pepper., Place 1 cup Tater Tots in a greased 3-cup baking dish. Layer with beef mixture and remaining Tater Tots; sprinkle with remaining cheese. Bake, uncovered, until bubbly, 20-25 minutes.

1 1/3 cup all purpose flour, spooned into measuring cup and leveled
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup cooking oats
3/4 cup M&Ms
3/4 cup semi-sweet chocolate chips
1/2 cup brown sugar, packed
1/2 cup white sugar
1/3 to 1/2 cup pecans, chopped

Steps:

  • Start with a 1 quart smooth Ball jar. I found these at Hobby Lobby craft store. Layer the ingredients in this order: Flour, baking powder, baking soda and salt Oats M&Ms Chocolate chips Brown sugar White sugar Chopped pecans Pack each level down really tightly. I mean it. Pack it in, or else it won't all fit. Also, I added the chopped pecans last, because if the ingredients were too much or not enough, then I could add more or less pecans to adjust. I'd rather sacrifice nuts than chocolate, you know. The ingredients should be flush to the top of the lid when you seal it up. DIRECTIONS ON TAG: Stir all the dry ingredients in a large mixing bowl. Add 1 slightly beaten egg, 1/2 cup butter melted slightly in the microwave, and 1 teaspoon vanilla. Mix wet ingredients into dry ingredients. Use the back of a large spoon to work it all together. You may even need to use your hands to get everything incorporated. Then roll the cookie dough into 1 1/2 inch balls, place on a parchment covered baking sheet and bake for about 10 minutes in a preheated 350°F oven. I got about 26 to 28 cookies out of these.

I love gifts in a jar! When I give this gift, I put it in a basket with all the items needed to make the casserole (except the ground beef and cheese). There are several single men that I make baskets for... and they really appreciate having everything along with the recipe... They only have to pick up the meat and cheese on the way home. When I make this I do several at a time. I always have them on hand for a gift or for use at home! The grandchildren like to help their daddy make this.

1 package(s) (1.5 ounce) brown gravy mix
LAYER 2
2 tablespoon(s) taco seasoning mix
1 tablespoon(s) each: dried cilantro flakes, dried parsley flakes
3 tablespoon(s) dried minced onion
2 teaspoon(s) ground cumin
1 teaspoon(s) garlic powder
2 tablespoon(s) beef boullion
1/2 teaspoon(s) ground red pepper (optional)
1 teaspoon(s) chili powder
LAYER 3
3 1/4 cup(s) wagon wheel pasta

Steps:

  • Pour gravy mix into wide-mouth quart jar.
  • In a small bowl, mix together all the spices and the bouillon. Make a paper funnel or use a canning funnel to put the spice layer into the jar.
  • Pour the wagon wheel pasta into the jar. Place lid and ring onto jar.
  • Cut a piece of cloth in a circle that is 3 - 4 inches wider than the jar ring. (I use a pinking sheers to cut the material for a nice edging. I use a rubber band to hold the cloth in place on the jar. Then I tie a pretty ribbon over the rubber band and attach the recipe card that has a hole in it to put the ribbon through. Then tie a pretty bow.
  • Preheat oven to 375 degrees.
  • The gift tag/ recipe card: Cowboy Casserole In a large skillet: Brown and cook well 1-1/2 pounds ground beef. Drain.
  • Add the ingredients in the jar to the skillet. Add 4 cups water Add 1 cup chunky salsa Add 1 (15 ounce) can black beans Add 1 (15 ounce) can Mexican Corn (drained)
  • Stir together well. Bring to a boil. Remove from heat. Either use cooking spray or oil to put a thin layer on 9 x 13 -inch baking pan. Pour the well stirred mixture into baking pan.
  • Cover baking pan tightly with aluminum foil. Bake for 65 to 75 minutes (or until pasta is cooked and tender). Remove foil. Add 1-1/4 cups shredded cheddar cheese over the top of the casserole.
  • Return to the oven for about 10-15 minutes until the cheese is melted. Makes 10 servings.
