1 pouch (1 lb 1.5 oz) Betty Crocker™ sugar cookie mix
1/2 cup shortening
1/4 cup mild-flavor (light) molasses
1 tablespoon ground ginger
1 1/4 teaspoons ground cinnamon
1 teaspoon ground cloves
1 egg
1 cup powdered sugar
1 teaspoon grated lemon peel
4 teaspoons lemon juice
1/4 cup finely chopped crystallized ginger

Steps:

  • Heat oven to 375°F. In large bowl, stir cookie ingredients until very soft dough forms (dough will be sticky).
  • On ungreased cookie sheets, drop dough with 1 tablespoon-size cookie scoop or by tablespoonfuls about 2 inches apart.
  • Bake 8 to 10 minutes or until edges are light golden brown. Cool 2 minutes; remove from cookie sheets to cooling racks. Cool completely, about 30 minutes.
  • In small bowl, stir powdered sugar, lemon peel and lemon juice until smooth. Spread glaze on cookies. Sprinkle with crystallized ginger.

COOKIES:
1 pkg sugar cookie mix
1/2 c shortening
1/4 c light molasses
1 Tbsp ginger, ground
1 1/4 tsp cinnamon, ground
1 tsp clove, ground
1 egg
GLAZE & TOPPINGS:
1 c powdered sugar
1 tsp lemon peel, grated
4 tsp lemon juice, fresh
1/4 c ginger, crystallized & chopped finely

Steps:

  • 1. First pre-heat the oven to 375F. Then in a large bowl stir the cookie ingredients until soft dough forms. It will be sticky.
  • 2. Next on an ungreased cookie sheets drop dough with 1 Tbsp size cookie scoop about 2 inches apart. Then bake for about 8 to 10 mins or until edges area light golden brown. Then let cool for 2 mins. Then remove from the cookie sheets to a cooling rack. Then let cool completely for about 30 mins.
  • 3. Then in a samll bowl stir the powdered sugar,lemon peel & lemon juice together until smooth. Spreadover the cooled cookies & sprinkle with the chopped crystallized ginger.

1/2 c shortening

1 Tbsp ground ginger

FOR THE GLAZE AND THE TOPPING:
1 c powdered sugar
1 tsp lemon zest, grated
4 tsp lemon juice
1/4 c finely chopped crystallized ginger

Steps:

  • 1. Preheat oven to 375.
  • 2. Line a baking sheet with foil and set aside.
  • 3. In the bowl of a stand mixer (or a large bowl), combine the cookie ingredients until very soft dough forms. It will be sticky, so don't worry about that.
  • 4. Use a medium cookie scoop or tablespoon to scoop the dough into the prepared baking sheet, 2 inches apart, they spread a good bit so give them room.
