4 whole small tilapia, boned
1 orange, sliced
1/2 cup plain yogurt
1/2 cup fresh coriander (cilantro), chopped
1/4 cup mayonnaise
4 tablespoons olive oil
2 tablespoons orange rind
2 tablespoons orange juice
2 tablespoons ginger root, chopped
1 tablespoon lime juice
salt and pepper to taste

  • 1. In a small bowl combine 2 tablespoons olive oil, with orange rind, orange juice, ginger root and 1/4 cup coriander. Season with salt and pepper. Spray 4 large pieces of aluminum foil with cooking spray and place one fish in the center of each. Divide orange mixture in 4ths and spoon into the body of each fish. Tips:

  • Choose fresh tilapia fillets: Look for fillets that are firm and have a slightly translucent color. Avoid fillets that are mushy or have brown spots.
  • Use a light hand with the ginger and orange: These flavors can be overpowering if you use too much. A little goes a long way.
  • Don't overcook the fish: Tilapia is a delicate fish that cooks quickly. Overcooking will make it dry and tough.
  • Serve the fish immediately: Tilapia is best served hot and fresh. If you need to make it ahead of time, cook it just until it is done and then reheat it gently before serving.

Conclusion:

Ginger orange tilapia is a delicious and healthy dish that is perfect for a weeknight meal. It is easy to make and can be tailored to your own taste preferences. With its bright and citrusy flavor, this dish is sure to please everyone at the table.
