GINGER YOGURT

Ginger Yogurt image

Posted for the Zaar World Tour 2006-India. From the "International Vegetarian" cookbook. This yogurt is barely sweetened and ginger tangy. This is especially delicious after the traditional curry meal. Serve it on its own or as a sauce over papaya, strawberries, seedless grapes, or kiwi fruit. Note: prep time includes refrigeration time.

BERRY YOGURT CRUNCH

Berry Yogurt Crunch image

Yogurt, fresh berries, and a surprise ingredient give this dish a somewhat cheesecake-like flavor but with a fraction of the fat and calories. Let the berry-yogurt mixture chill awhile so flavors mingle and mellow. Make a flavor change by substituting instant white chocolate pudding mix. I've served this for dessert, but it's good as a breakfast treat, too!

Tips:

  • Choose ripe berries: Fresh, ripe berries will have the best flavor and texture. Look for berries that are plump, brightly colored, and free of blemishes.
  • Use plain yogurt: Plain yogurt is the best choice for this recipe because it allows the natural flavors of the berries and caramel to shine through. If you use flavored yogurt, the flavors may clash.
  • Sweeten the yogurt to taste: If you find that the yogurt is too tart, you can sweeten it with honey, maple syrup, or agave nectar. Start with a small amount and add more to taste.
  • Make the caramel ahead of time: The caramel can be made up to a week in advance. Store it in an airtight container in the refrigerator. When you're ready to serve the yogurt, simply reheat the caramel in the microwave or over low heat on the stovetop.
  • Serve the yogurt immediately: The yogurt is best served immediately after it is made. The caramel will start to harden as it cools, so don't let it sit for too long before serving.

Conclusion:

This ginger yogurt with berries and crunchy caramel is a delicious and easy-to-make breakfast, snack, or dessert. The yogurt is creamy and tangy, the berries are sweet and juicy, and the caramel is rich and flavorful. This recipe is sure to please everyone at your table.
