GRAN'S APPLE CAKE
My grandmother occasionally brought over this wonderful cake warm from the oven. The spicy apple flavor combined with the sweet cream cheese frosting made this recipe one that we treasured. Even though I've lightened it up, it's still a family favorite. -Lauris Conrad, Turlock, California

Steps:
- Preheat the oven to 350°F.
- Generously grease an 8-inch round cake pan (no need to grease if pan is nonstick).
- Melt the butter in a medium skillet over medium-high heat. Sauté the apples, tossing occasionally, until golden brown, 5 to 7 minutes. Stir in the Calvados, 1 tablespoon of the sugar, and the cinnamon. Set aside until needed.
- Whisk together the yogurt and the remaining sugar in a large bowl, until very smooth, about 2 minutes. Combine the flour and baking soda, then add the oil and eggs, whisking well after each addition. Stir the apple pieces into the batter.

- Note: The cake is best made several hours before serving, or better yet, the night before.
Tips:
- Use a box grater to grate the apples for a finer texture.
- If you don't have a box grater, you can use a food processor to chop the apples.
- Be sure to peel the apples before grating or chopping them.
- Use fresh apples for the best flavor.
- If you only have frozen apples, thaw them completely before using them.
- You can use any type of apple you like, but Granny Smith apples are a good choice because they hold their shape well when baked.
- Be sure to grease and flour the baking pan before adding the batter.
- Bake the cake at 350 degrees Fahrenheit for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool completely before frosting it.
