GRAVY WITHOUT MEAT DRIPPINGS

Gravy Without Meat Drippings image

This is the gravy I use when I make poutine. We all love it and it's so easy to make. It tastes great and you don't need meat drippings to make it! I found this on www.chocolatemoosey.com

Time 20m

Yield 4 serving(s)

Number Of Ingredients 6

1/4 cup butter
3/4 cup onion, finely chopped
2 tablespoons flour
1 cup stock, any flavor (I use 1 can Campbells low sodium beef broth)
1 tablespoon heavy cream
salt and pepper

Steps:

  • In a sauce pan, melt the butter.
  • Cook the onion until lightly browned, roughly 5-8 minutes.
  • Whisk in the flour and cook for 1 minute.
  • Whisk in the stock and cook uncovered until thickened, roughly 5 minutes.
  • Whisk in the cream and season with salt and pepper to taste.
  • Serve while hot. (See Note).
  • Note - You can make this ahead of time since no meat drippings are needed. It will gel up in the fridge, so when you are ready to serve, heat it back up in a sauce pan and whisk until smooth and hot. * If you have picky eaters who won't eat onion chunks or if the onions get a little overdone, strain the onions before serving.

THANKSGIVING NO-TURKEY TURKEY

Thanksgiving No-Turkey Turkey image

This vegetarian treat is a beautiful addition to the Thanksgiving holiday table. My family has been making it for years. You won't even miss the turkey! For a shiny crust, brush pastry lightly with soy milk. To serve, cut straight down through pastry, stuffing, and seitan to make neat 1/2 inch slices. Spoon additional gravy over each serving.

Time 10h15m

Yield 10

Number Of Ingredients 14

2 (1 pound) loaves multigrain bread
2 tablespoons margarine
2 carrots, minced
2 large stalks celery, minced
1 onion, minced
¼ cup chopped fresh parsley
1 teaspoon crumbled dried sage
ground black pepper to taste
5 ½ teaspoons egg replacer (dry)
½ cup water
½ cup vegetable broth
2 (16 ounce) packages chicken-style seitan, cut horizontally into 1 inch thick strips
1 cup garbanzo bean gravy
1 (17.5 ounce) package frozen puff pastry, thawed

Steps:

  • Tear bread into 1-inch cubes and place into a large bowl. Let bread dry in the bowl, uncovered, at least 8 hours.
  • Melt margarine in a large skillet over medium-high heat. Stir in carrots, celery, and onion. Cook and stir until the onion has softened and turned golden brown, about 10 minutes. Scrape onion mixture into the bowl with the dried bread; season with parsley, sage, and pepper. Whisk egg replacer, water, and vegetable broth in a small bowl until smooth. Pour over bread cubes and gently fold until evenly mixed. Let stand 30 minutes to allow bread to absorb the liquid.
  • Preheat an oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil and coat with nonstick cooking spray.
  • Brush seitan with gravy on both sides; arrange overlapping slices on foil in a row, mounding in the center. Press stuffing mixture around seitan to cover. Wet hands lightly and press into a neat oval. Roll pastry sheets out to 1/16-inch thickness; arrange, overlapping slightly, to make a large rectangle. Seal edges with dabs of cold water. Drape pastry over mound; trim excess away from bottom. Use scraps to cut out decorative shapes (leaves, apples, etc). Attached with dabs of cold water.
  • Bake until the pastry in deep golden brown, 1 to 1 1/4 hours. Cover the pastry with aluminum foil if it begins to brown too much.

Tips:

  • Use a flavorful base: Start with a flavorful base for your gravy, such as sautéed vegetables, mushrooms, or herbs.
  • Add some umami: Umami is the fifth taste, and it adds a savory, meaty flavor to dishes. You can add umami to your gravy with ingredients like soy sauce, miso paste, or Worcestershire sauce.
  • Use a thickener: To thicken your gravy, you can use a variety of ingredients, such as flour, cornstarch, arrowroot powder, or even mashed potatoes. Be sure to whisk the thickener into the gravy slowly to avoid lumps.
  • Season to taste: Once you've made your gravy, be sure to season it to taste with salt, pepper, and other herbs and spices. You can also add a splash of acid, such as lemon juice or vinegar, to brighten the flavors.
  • Garnish and serve: Finally, garnish your gravy with fresh herbs, chopped nuts, or a drizzle of olive oil. Serve it immediately over your favorite dishes.

Conclusion:

Making gravy without turkey is a great way to enjoy the delicious flavors of gravy without having to cook a whole turkey. With a few simple ingredients and a little bit of time, you can make a flavorful and satisfying gravy that will be perfect for your next meal. So next time you're craving gravy, don't be afraid to give one of these recipes a try.
