Time 20m

Yield 4 serving(s)

Number Of Ingredients 6

1 lb fresh green beans, ends trimmed
1 tablespoon olive oil
1/2 cup walnuts, coarsely chopped
salt and pepper
2 tablespoons balsamic vinegar
3 ounces goat cheese, crumbled

Steps:

  • Steam green beans in boiling water until crisp-tender (4-6 minutes).
  • Drain and set aside.
  • Heat olive oil in skillet over medium heat, add walnuts, and toast in oil for about 3 minutes.
  • Add green beans, salt and pepper.

  • Add balsamic vinegar, toss with beans and walnuts to thoroughly coat.
  • Remove from heat.
  • Sprinkle with crumbled goat cheese, toss lightly and transfer to serving dish.

Tips:

  • Choose fresh, crisp green beans. Avoid beans that are limp or have brown spots.
  • Trim the beans by removing the ends. You can also blanch the beans by boiling them for 2-3 minutes and then immediately transferring them to an ice bath. This will help to preserve their color and crunch.

  • Use high-quality blue cheese. Crumbled blue cheese or Gorgonzola cheese are both good options.
  • Toast the walnuts in a dry skillet until they are fragrant. This will enhance their flavor.
  • Serve the green beans warm or at room temperature. They can be served as a side dish or as a main course.

Conclusion:

Green beans with blue cheese and walnuts is a delicious and easy-to-make side dish that is perfect for any occasion. The beans are tender-crisp and flavorful, and the blue cheese and walnuts add a rich and nutty flavor. This dish is sure to please everyone at your table.
