MANGO-AVOCADO SALAD WITH LIME VINAIGRETTE

Mango-Avocado Salad With Lime Vinaigrette image

Inspired by Vietnamese green papaya salad, this salad stars ripe, juicy mangoes and dresses them in the classic punchy lime-fish sauce dressing. Tender torn greens, crunchy sweet snap peas and creamy avocado round out this dish with both crispy and creamy bites. The cooling salad is the perfect side to accompany grilled or roasted fish, chicken, or steak. If mangoes are unavailable, tomatoes or sweet stone fruit like peaches are tasty options.

MANGO AND AVOCADO SALAD

Looks delicious. Saw Sunny Anderson make this on Cooking for Real. She said it's a great side dish for hot dishes such as jerk chicken. UPDATE: I just made this recipe and WOW is it good! I left out the onions and it was fabulous. I used my expensive balsamic vinegar (which is thick and sweet), however if you want it to be pretty in the end, you may want to use white balsamic and add a pinch of sugar. Great meal starter.

Tips:

  • Choose ripe mangoes and avocados: For the best flavor and texture, use ripe mangoes and avocados. Ripe mangoes should be slightly soft to the touch and have a sweet, fragrant smell. Ripe avocados should also be slightly soft and yield to gentle pressure.
  • Use a variety of greens: This salad is a great way to use up leftover greens. You can use any type of greens you like, such as romaine lettuce, spinach, arugula, or watercress.
  • Add some herbs: Fresh herbs, such as cilantro, basil, or mint, can add a pop of flavor to the salad. Add them just before serving so they don't wilt.
  • Don't overdress the salad: A little bit of dressing goes a long way. Overdressing the salad will make it soggy and bland. To prevent the salad from getting too oily, keep the fat from the avocado dressing from pooling in the bottom of the salad bowl by adding the dressing just before serving.

Conclusion:

This green salad with mango and avocado is a refreshing and healthy side dish that is perfect for any occasion. It is packed with flavor and nutrients, and it is sure to be a hit with your family and friends. The combination of sweet mango, creamy avocado, and tangy lime dressing is simply irresistible. So next time you are looking for a healthy and delicious salad, give this recipe a try. You won't be disappointed.
