2 teaspoons fresh rosemary, minced

1 ½ pounds skinless, boneless chicken breasts

Steps:

  • In a blender combine the parsley, rosemary, thyme, sage, garlic, oil, vinegar and salt and pepper to taste. Blend together. Place chicken in a nonporous glass dish or bowl and pour blended marinade over the chicken. Cover dish and refrigerate to marinate for at least 2 hours or up to 48 hours.
  • Preheat grill to medium high heat OR set oven to broil.
  • Remove chicken from dish (disposing of leftover marinade) and grill or broil for about 6 to 7 minutes per side, or until chicken is cooked through and no longer pink inside.

2 heads garlic, cut in 1/2 horizontally
Kosher salt
Freshly ground black pepper
Extra-virgin olive oil
2 whole fresh thyme sprigs, plus leaves from 6 sprigs
2 lemons, juiced, plus 2 lemons, halved
About 1 bunch flat-leaf parsley, leaves chopped
1 (4 to 4 1/2-pound) chicken, cut into 10 pieces
2 heads radicchio, preferably Treviso, cut into quarters
1 tablespoon balsamic vinegar

Steps:

  • Preheat the oven to 400 degrees F. Cut a piece of aluminium foil about 12 inches long.
  • Put the garlic on 1/2 of the foil, sprinkle with salt and pepper, drizzle in some olive oil, and add 2 sprigs of thyme. Fold the foil enclosing the garlic, making a pouch, and add a couple teaspoons of water. Fold the foil over the garlic to enclose and fold in the edges 2 or 3 times to seal. Put the package in the oven and roast for 30 minutes, or longer, until the garlic is soft. Open the package and let the garlic cool a bit, then squeeze out the cloves into a food processor or blender. Add 1/2 cup olive oil, the lemon juice, parsley, and thyme leaves and puree to make a thick vinaigrette.
  • Preheat an outdoor gas or charcoal grill to medium heat.
  • Rinse the chicken and pat dry with paper towels. Put the pieces in a bowl, sprinkle with salt and pepper, and drizzle with olive oil; toss to coat with the seasonings and then refrigerate while you get everything else together.
  • Put the radicchio in another bowl, drizzle with olive oil, balsamic vinegar. Sprinkle with salt and pepper and toss; set aside.
  • When you're ready to cook, take a few paper towels and fold them several times to make a thick square. Blot a small amount of oil on the paper towel and carefully and quickly wipe the hot grates of the grill to make a nonstick surface.
  • Season with salt and pepper and place the radicchio quarters on the preheated grill. Cook the radicchio for about 2 minutes per side until it has a nice char; pull it off the grill, place into a bowl, cover with plastic wrap, and set aside to steam and finish cooking.
  • Then put the chicken on the grill, skin side down, and grill. Grill the chicken for about 20 minutes, turning once, then baste with about half of the vinaigrette and keep cooking until an instant-read thermometer stuck into the thickest part of the thigh reads 160 degrees F and the chicken is nice and caramelised all over, 15 to 20 more minutes. During the last few minutes, throw the lemon halves on the grill, cut sides down, and cook until just marked and smoky.
  • To serve, separate the radicchio into individual leaves in a big bowl. Add the chicken and the rest of the dressing and toss well. Serve with grilled lemon halves, squeeze the lemon over the chicken, and top with reserved dressing.

3 bone-in, skin-on chicken breasts
1 cup lightly packed fresh basil leaves
1 large garlic clove

  • Whisk 1/3 cup of oil, 3 tablespoons of lemon juice, fennel seeds, 3/4 teaspoon of salt, and 1/2 teaspoon of pepper in a resealable plastic bag. Add the chicken and seal the bag. Massage the marinade into the chicken. Refrigerate at least 30 minutes and up to 1 day, turning the chicken occasionally.
  • Meanwhile, blend the basil, garlic, lemon peel, remaining 1/4 cup lemon juice, 3/4 teaspoon salt, and 1/2 teaspoon pepper in a blender until smooth. Gradually blend in the remaining 1/3 cup oil. Season the basil sauce, to taste, with more salt and pepper, if desired.

¼ cup red wine vinegar
2 teaspoons kosher salt

¼ cup olive oil

  • Cut chicken breasts in half lengthwise.
  • Combine red wine vinegar, kosher salt, black pepper, cayenne, thyme, oregano, rosemary, and garlic powder in a bowl. Add chicken and toss until thoroughly and evenly coated. 4 -6 large chicken breasts, boneless skinless (pocket cut for the stuffing)
4 slices fresh mozzarella cheese (if you don't want to use fresh mozzarella, you could use provolone or even swiss)
1 1/2 cups Italian dressing (1 cup to marinade, 1/2 cup to brush on during grilling)

2 1/2 cups fresh breadcrumbs (I used day old baguettes, rough chopped in the food processor, don't grind them too fine)
1 1/4 cups cherry tomatoes, cut in half (grape tomatoes are a good substitution)
1/2 small onion, diced fine
1 teaspoon garlic, minced
2 scallions, green and white, fine diced
1/2 cup parmesan cheese, grated
2 tablespoons fresh parsley, minced
1 tablespoon fresh basil, minced
1 teaspoon fresh rosemary, minced
1 teaspoon olive oil

Steps:

  • Chicken -- Now, my butcher at my grocery store will cut the pockets for me, but they aren't hard. Just make the pocket as big as possible so you can get the most stuffing inches I said 4-6 chicken breasts because depending on the size of the breast, you may have enough stuffing for 6.
  • Marinate -- Add the Italian dressing and chicken to a large baggie / ziplog bag, seal and toss well to coat all the chicken. I prefer to marinate the chicken all day if I have the time, but even just a hour or so will give the chicken a nice flavor. When you are ready to make the chicken, remove from the refrigerator to take the chill off.
  • Stuffing -- In a medium size sauce pan, add the olive oil and bring to medium heat. Add the onion, garlic, scallions and saute 2-3 minutes until the onions become tender, then add in the tomatoes, salt and pepper and cook until they JUST begin to get soft, 2-3 minutes if that. Remove from the heat.
  • In a medium size bowl, add the bread crumbs, herbs, parmesan cheese, salt and pepper. Slowly spoon in the tomato, onion and garlic mixture. You want some of the juice, but maybe not all of it. Just toss the vegetables and bread together until the bread is moistened but not "soggy.".
  • Chicken -- Stuff the chicken with as much stuffing as possible and secure with a toothpick if necessary. Season well with salt and pepper.
  • Grill -- On a medium heat grill, add the chicken and grill on both sides until you get good grill marks. Brush each side a couple of times with the remaining Italian dressing. If the chicken gets too brown before it is finished cooking, just add a piece of foil on the grill and place the chicken on that.
  • Cheese -- The last few minutes, top each breast with a slice of the mozzarella cheese and grill until it is melted and "gooey.".
  • Serve -- Just enjoy a great summertime recipe. Serve with some grilled asparagus and maybe a nice salad.
  • Prep Time does NOT include marinating time.

3 garlic cloves, smashed
¼ cup olive oil
1 (3½-pound) whole chicken
1 (1½-pound) skin-on, bone-in whole chicken breast
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
Chimichurri Sauce (for serving)

Steps:

  • Prepare a grill for medium-high heat with both direct and indirect heat zones, preferably with hardwood or hardwood charcoal. Separate leaves from 5 rosemary sprigs, then coarsely chop leaves. Tie remaining sprigs together with kitchen twine to form a brush. Combine garlic and oil in a measuring cup.
  • Place chicken breast side down on work surface. Spatchcock chicken by cutting along both sides of backbone with kitchen shears; reserve backbone for stock. Turn chicken over, breast side up, and splay open. Press down on breastbone with palms until you hear it crack and chicken is as flat as possible. Tuck the wings behind the breasts, then tuck in the legs so the bottoms of the drumsticks are pointed away from the body and chicken is as flat as possible.
  • Brush all sides of both pieces of chicken with the garlic-oil using rosemary brush. Sprinkle all sides with chopped rosemary leaves, salt, and pepper.
  • Grill both pieces of chicken, skin side down, over direct heat, until skin is golden brown, crispy, and lightly charred, about 5 minutes. Flip both pieces of chicken over, transfer to indirect heat, and baste with rosemary brush dipped in garlic-oil.
  • Continue to grill chicken, basting occasionally, until skin is golden brown, juices run clear, and an instant-read thermometer inserted into the thickest part of the meat registers 165°F, 45-60 minutes for whole chicken and 25-35 minutes for chicken breast. Let chicken stand at least 10 minutes before carving. Arrange chicken on a serving platter and serve with chimichurri sauce alongside.

Grilled Chicken with Fresh-Herb Dressing image

1 chicken (4 pounds), cut into 10 pieces (breasts halved crosswise)
1 cup packed cilantro leaves
1 chopped serrano chile
2 chopped scallions
Finely grated zest of 1 lime, plus 2 tablespoons fresh lime juice
1/4 cup extra-virgin olive oil, plus more for coating

Steps:

  • Combine 1 tablespoon salt and 1/2 teaspoon pepper. Sprinkle mixture evenly on chicken, then set chicken on a rimmed baking sheet. Let stand uncovered 1 hour.

(On a gas grill, turn one side on high, and leave the other burners off.) Lightly coat chicken with olive oil and place over indirect heat. Cover and cook, turning occasionally, until pieces are cooked through and a thermometer inserted into thickest parts (not touching bones) registers 165 degrees, about 30 minutes.
  • Uncover grill; transfer chicken to direct heat. Brush dressing over chicken as pieces come off the grill.
