Steps:

  • In a mixing bowl, whisk together orange juice, lime juice, shallots, garlic, chili powder, cumin, and sugar. Pour 1/2 of this mixture into a large, resealable plastic bag, and add the chicken breasts. Seal, and refrigerate for at least 2 hours. Refrigerate the remaining dressing.

1/4 cup plus 1 tablespoon fresh lime juice
1/4 cup plus 1 tablespoon olive oil
2 jalapeno peppers, 1 thinly sliced, 1 diced
4 boneless skinless chicken breasts, trimmed of fat
Coarse salt, to taste
Freshly ground pepper, to taste
2 dashes tequila (optional)
1 navel orange, peeled, sectioned and cut into 1/4-inch pieces
1 small pink grapefruit, peeled, sectioned and cut into 1/4-inch pieces
4 scallions, thinly sliced
10 yellow and/or red cherry tomatoes, seeded and diced
Grated zest of 1/2 orange and 1/2 lime
1/4 cup chopped fresh, cilantro
4 tomatillos, diced (optional)
4 handfuls of mesclun or other mixed greens

Steps:

  • In a shallow bowl, combine 1/4 cup of each of the lime juice, olive oil, and jalapeno slices. Rub chicken with salt and pepper, add to marinade. Add a dash of tequila. Marinate for at least half an hour.

16 6-inch flour tortillas
3 large, ripe Haas avocado, peeled and coarsely chopped
1/4 cup finely chopped onion
3 tomatillos, husked, washed and coarsely chopped
1 jalapeno, finely chopped
3 tablespoons fresh lime juice
3 tablespoons finely chopped cilantro
Salt and freshly ground pepper
1 cup fresh orange juice
1 cup fresh lime juice
1/2 cup fresh lemon juice
1/4 cup ancho chile powder
2 tablespoons paprika
4 cloves garlic, coarsely chopped
1 cup olive oil
8 chicken breasts, bone in, skin on

  • For the grilled tortillas: Brush each tortilla on both sides with olive oil and season with salt and pepper to taste. Grill for 1 minute on each side. Cover and refrigerate for 1 hour in the refrigerator, turning once.
  • Preheat grill. Remove chicken from marinade and season on both sides with salt and pepper to taste. Grill the breasts, skin-side down, for 4 minutes or until golden brown. Turn the breasts over and baste with some of the reserved marinade and cook for 4 minutes. Baste, turn and baste again, cover the grill and cook the breasts for 4 more minutes. 1 dash cayenne pepper
4 skinless, boneless chicken breast halves

1 cup basmati rice
1 mango - peeled, seeded and diced
½ cup orange juice
2 tablespoons fresh lime juice
2 tablespoons honey
2 teaspoons cornstarch
1 ½ tablespoons water
2 tablespoons dark rum

  • In a medium bowl, mix the ginger, cinnamon, cumin, anise, and cayenne pepper. Rub the chicken with the spice mixture, and place in the bowl. Cover, and refrigerate 20 to 30 minutes.

1/2 cup freshly squeezed orange juice
1/4 cup freshly squeezed lime juice
1/4 cup freshly squeezed lemon juice

6 garlic cloves, chopped
3 tablespoons brown sugar
3 Chipotle chiles, canned or rehydrated in vinegar
3 red peppers, seeded and chopped
1 medium red onion, thinly sliced
3 tablespoons cider vinegar

2 large mangos, peeled, pitted and cut into 1-inch pieces
3 ripe bananas, peeled and cut on the bias into thick slices
1 pineapple, peeled and sliced
Juice of 1 lime
Vegetable oil, for the grill

Steps:

  • Place the chicken pieces in a baking dish. In a blender, combine the citrus juices, rum, garlic, sugar, chipotles, red peppers, onion, vinegar and olive oil. Pulse gently. Pour marinade over the chicken pieces, cover and refrigerate for 2 hours or overnight. Turn the chicken once. Remove the chicken from the refrigerator 30 minutes before cooking.
  • Preheat the grill.
  • Place the mango pieces, banana slices and pineapple on a sheet of foil and brush with lime juice. Set aside.
  • When the grill is ready, brush with vegetable oil. Season the chicken with salt and pepper. Place the chicken pieces, cavity sides down, on the grill and cook for 10 minutes. 6 large boneless skinless chicken breasts
12 ounces frozen orange juice
18 ounces orange marmalade
2 tablespoons salt
1 orange
2 mangoes
1 lime
1/4 cup rum
3 tablespoons butter
1 habanero pepper
2 tablespoons honey
1 leaf from 2 sprigs cilantro (optional)
1 teaspoon salt

Steps:

  • Lightly pound chicken to soften.
  • In a large baking dish, combine thawed Orange Juice, melted Orange Marmalade and Salt.
  • Add chicken and enough water to just cover chicken.
  • Marinate chicken at least 2 or up to 48 hours. (I always make it at least a day ahead for more flavor.).
  • Sauce: (Can be made up a day ahead or frozen and re-heated) :.
  • In a food processor, puree mangoes.
  • Add the juice of 1 orange, 1 lime, 1/4 cup rum, butter, honey, cilantro and salt.
  • Mix in processor and transfer to saucepan.
  • Add whole (not chopped) habanero into saucepan and heat on medium heat until the sauce has your preferred amount of heat.
  • Remove pepper. (If it is still not hot enough after 20 minutes, remove pepper and dice. Slowly add until it is to your taste.

  • In a gallon size re-sealable bag, add the chicken, grapefruit soda, orange juice, rice vinegar, Dijon, olive oil, lemon pepper and granulated garlic. Place in the refrigerator and marinate for 2 hours.

1 shallot, peeled and chopped
1 cup orange juice
1/3 cup white balsamic vinegar
1/4 cup lemon juice

Salt and Pepper to taste
Chorizo Stuffed Olives
16 jumbo California ripe olives
1/2 link Spanish chorizo, finely minced
1/4 cup flour
1 egg, beaten
1/2 cup panko bread crumbs
1 cup canola oil
Salad
1 lb. boneless, skinless chicken breasts
Salt and pepper to taste
16 small fingerling potatoes, thinly sliced
1/4 cup olive oil
2 cups coarsely chopped escarole or curly endive
3/4 cup roasted red bell pepper strips

Steps:

  • To prepare vinaigrette, heat a small amount of the olive oil in a medium saucepan. Add shallot and cook for 5 minutes to soften. Add juices and vinegar and bring to a boil. Reduce heat slightly and cook until mixture is reduced to 1/4 cup. Let cool, then place in a blender. With blender running, drizzle in remaining oil slowly to emulsify. Chill until ready to use.
