  • Choose the right sea bass: Look for a fish that is firm to the touch and has bright, clear eyes. Avoid fish that have a slimy or dull appearance.
  • Prepare the grill: Preheat your grill to medium-high heat. If using a charcoal grill, wait until the coals are glowing red and white.
  • Season the sea bass: Before grilling, season the fish with salt, pepper, and any other desired seasonings. You can also add a marinade or rub to enhance the flavor.
  • Grill the sea bass: Place the sea bass fillets on the grill and cook for 5-7 minutes per side, or until the fish is cooked through. The fish should be opaque and flaky when it is done.
  • Make the chili lime dressing: While the sea bass is grilling, prepare the chili lime dressing. Combine the lime juice, fish sauce, honey, cilantro, and chili peppers in a bowl and whisk until well combined.
