GRILLED TUNA

Grilled Tuna image

Tuna is available most of the year, so fresh steaks should be easy to come by. Be choosy: a reddish color is acceptable, but flesh with dark spots or streaks should be avoided. As with all great ocean fish, the flesh tends to be dry. Marinate with oil, and avoid overcooking. The timing is critical, as tuna should be served medium rare. Use a kitchen timer.

3 tablespoons fresh lemon juice
2 large egg yolks
1 tablespoon water
2 tablespoons chopped fresh tarragon
Additional olive oil

Tips:

  • Choose the freshest tuna steaks possible. Look for steaks that are bright red and have a mild, briny smell. Avoid steaks that are brown or have a strong fishy odor.
  • Marinate the tuna steaks in a flavorful mixture before grilling. This will help to tenderize the steaks and add flavor. Some good options for marinades include olive oil, lemon juice, herbs, and spices.
  • Grill the tuna steaks over medium-high heat. This will help to sear the outside of the steaks and cook them evenly throughout.
  • Cook the tuna steaks to your desired doneness. For rare tuna, cook the steaks for about 1 minute per side. For medium-rare tuna, cook the steaks for about 2 minutes per side. For medium tuna, cook the steaks for about 3 minutes per side. And for well-done tuna, cook the steaks for about 4 minutes per side.
  • Serve the grilled tuna steaks immediately with your favorite sides. Some good options for sides include roasted vegetables, grilled potatoes, or a simple salad.

Conclusion:

Grilled tuna is a delicious and healthy meal that can be enjoyed by people of all ages. By following these tips, you can grill tuna steaks perfectly every time. So next time you're looking for a quick and easy weeknight meal, give grilled tuna steaks a try!
