SIMPLE YET YUMMY TORTELLINI SALAD
I was making pasta salad for a picnic and noticed that I ran out of dressing. All I had was extra-virgin olive oil. So, that's all I used, with some salt. It was so much better this way. Everyone wanted the recipe and then couldn't believe that oil was the only thing on this salad. Please try it this way and if you don't agree, you can always add vinegar or something. But, I don't think you will.

Steps:
- In a medium bowl, whisk together the vinegar, olive oil, chives, salt and pepper. Toss the asparagus in the dressing, then cook over a medium-hot grill to desired doneness. Place on four salad plates, drizzle with remaining dressing and garnish with cheese.
Tips:
- Choose fresh, firm zucchini: Look for zucchini that is deep green in color and has no blemishes. The zucchini should also be firm to the touch.
- Grill the zucchini properly: To get the best flavor, grill the zucchini over medium-high heat until it is slightly charred and tender. You can also grill the zucchini in a grill pan or on a stovetop grill.
- Use a variety of vegetables: In addition to zucchini, you can also add other vegetables to your salad, such as tomatoes, corn, or bell peppers. This will add flavor and color to the salad.
- Make sure the tortellini is cooked properly: Tortellini should be cooked according to the package directions. If you are using fresh tortellini, it will need to be cooked for longer than dried tortellini.
- Use a flavorful dressing: The dressing for your salad should be flavorful and complement the other ingredients. A simple vinaigrette dressing made with olive oil, balsamic vinegar, and herbs is a good option.
Conclusion:
Grilled Zucchini and Tortellini Salad with Asiago Cheese is a delicious and refreshing summer salad that is perfect for a light lunch or dinner. The grilled zucchini adds a smoky flavor to the salad, while the tortellini and Asiago cheese add protein and richness. This salad is also very versatile, so you can add or remove ingredients to suit your taste.
