BEST TURKEY MEATLOAF

Best Turkey Meatloaf image

After much trial and error trying to make a more healthy meatloaf, I came up with this recipe. It is important to make this on a baking sheet so the liquids can be drained off the meatloaf. Also, do not put the topping on before the meatloaf has cooked for 30 minutes. Turkey creates a lot of juices, so if you put the topping on first it will become watery and runny.

1 ½ pounds ground turkey
¾ cup crushed buttery round crackers
½ cup milk
1 small onion, chopped

¼ cup brown sugar
1 tablespoon Worcestershire sauce

2 pounds ground turkey, 97/3
1 green pepper, diced small
1 medium onion, diced small
1 cloves garlic, minced
¼ teaspoon dried thyme
¼ teaspoon dried basil
½ teaspoon salt
¼ teaspoon pepper
1 tablespoon Worcestershire sauce
1/2 cup ketchup, divided
⅓ cup chicken broth, low sodium
1 cup dry bread crumbs
2 eggs, lightly beaten

Steps:

  • Preheat oven to 375 degrees. Line a baking pan with foil and lightly spray with non-stick cooking spray.

Stir in the thyme, basil, salt and the pepper and continue to saute for another minute. • Put the mixture onto the prepared pan. Shape into a loaf about 9 to 10 inches in length. Add the remaining ketchup to the top. Bake for one hour or until the internal temperature reaches 165 degrees. Let stand for 10 minutes before slicing.

MEATLOAF WITH A KICK!

Meatloaf With a Kick! image

We loved this meatloaf which was printed in Redbook magazine. The original recipe says to shape it in a loaf and cook it on a cookie sheet, but we just put it in a loaf pan cooking for about the same amount of time. Served with baked potatoes and cooked carrots this is my idea of comfort food!

Time 1h15m

Yield 6-10 serving(s)

Number Of Ingredients 17

3/4 cup catsup
2 teaspoons prepared horseradish
1 teaspoon ground cumin
1/2 teaspoon Worcestershire sauce
1/4 cup oats
1 egg, beaten
2 teaspoons kosher salt
1 teaspoon black pepper
1 teaspoon cayenne pepper
1 teaspoon ground cumin
1 onion, quartered
1 carrot, peeled and cut into pieces
1 celery rib, cut into pieces
2 garlic cloves, peeled and halved
2 1/2 lbs ground beef
1/2 teaspoon dried thyme
1 tablespoon fresh parsley, chopped

Steps:

  • To make glaze whisk together glaze ingredients in a measuring cup or bowl and set aside.
  • Heat oven to 325 degrees F.
  • In a food processor or blender grind the oatmeal and then transfer them to a large bowl. Add egg, milk, salt, peppers and cumin to oats and stir to combine.
  • In the food processor add the vegetables (onion - garlic) and pulse until chopped (I processed a bit too long so mine resembled baby food but it still worked out well). Add to the ground beef mixture, stirring to combine -- do not over mix.
  • Spoon into a loaf pan (original recipe said to form into a oval that is 8 x 4 x 3 -- but the loaf pan is so much easier.
  • Bake for 10 minutes and then spoon glaze over loaf. Cook for another 50 minutes or until done. Let rest a few minutes before serving.

GROUND TURKEY MEATLOAF

Categories     Poultry

Time 1h10m

Yield 6-8 serving(s)

Number Of Ingredients 11

1 tablespoon butter
1/2 medium onion, chopped
4 garlic cloves, minced
1 (20 ounce) package ground turkey
1 egg
1 cup breadcrumbs
1/2 cup ketchup (plus more to coat top of meatloaf)
3 teaspoons Worcestershire sauce
salt and pepper
Frank's red hot sauce
parmesan cheese (optional)

Steps:

  • Melt the butter in skillet over medium high heat.
  • Sautee the onion and garlic until soft, but make sure not to burn garlic.
  • Set aside onion and garlic to cool.
  • Combine turkey, egg, breadcrumbs, ketchup, worcestershire sauce, salt and pepper, garlic and onion, until all the ingredients are thoroughly mixed (I added about 1/2 Tbsp of Frank's Red Hot for a little kick, but can be decreased/increased depending on preference).
  • Transfer mixture to a greased 8x4 inch loaf pan.
  • Brush ketchup on top to coat.
  • Bake at 350 degrees for about 50-55 minutes.
  • If using the parmesan, add at last 5 minutes and set oven to broil so cheese gets slightly crisp (keep an eye on it so it doesn't burn!).
  • Let meatloaf set for 5 minutes after removing from oven.

Tips:

  • Choose lean ground turkey: For a healthier meatloaf, opt for ground turkey with a fat content of 90% or leaner.
  • Use a variety of vegetables: This will add flavor, texture, and nutrients to your meatloaf. Some good options include onions, carrots, celery, and bell peppers.
  • Don't overmix the meatloaf mixture: Overmixing can make the meatloaf tough. Just mix until the ingredients are combined.
  • Shape the meatloaf into a loaf: This will help it cook evenly.
  • Bake the meatloaf at a high temperature: This will help to seal in the juices and prevent the meatloaf from drying out.
  • Let the meatloaf rest before slicing: This will help the juices to redistribute throughout the meatloaf, making it more moist and flavorful.

Conclusion:

Ground turkey meatloaf is an easy and affordable meal that can be enjoyed by the whole family. It's a great way to use up leftover vegetables, and it can be tailored to your own taste preferences. With a little planning and preparation, you can make a delicious and healthy meatloaf that everyone will love.
