If you want to use large marshmallows in this salad, be sure to quarter them!

1 lb gumdrop (use the fruity, no licorice)
1 lb red seedless grapes (halved)
1 (16 ounce) package miniature marshmallows
1 (20 ounce) can crushed pineapple, drained, reserve juice
1 cup chopped nuts
1 lemon, juice of
3/4 cup pineapple juice (from crushed pineapple)
2/3 cup sugar
1 teaspoon white vinegar
1/4 cup flour

Steps:

  • Mix the gumdrops, grape halves, marshmallows, pineapple, and nuts in a large bowl.
  • Measure lemon juice and add an equal amount of water. Blend with the pineapple juice, sugar and vinegar in a pan.
  • Bring to a boil. Stir in flour. Cook until thickened, stirring or whisking constantly. Cool.
  • Pour over the gumdrop mixture and mix well.

Two 1/4-ounce envelopes unflavored gelatin
3/4 cup granulated sugar, plus more for coating
One 3-ounce package cherry-flavored gelatin
Granulated red sugar, for coating
Coarse white sugar, for coating

Steps:

  • Sprinkle the unflavored gelatin over 1/2 cup water to soften; set aside.
  • Put the granulated sugar and 1/2 cup water in a saucepan and bring to a boil, stirring to dissolve the sugar. Simmer for 5 minutes. Add the cherry-flavored gelatin to the pan, followed by the softened unflavored gelatin. Stir and remove from the heat. Continue stirring until the gelatins are dissolved, 1 to 2 minutes. Strain into a measuring cup and let cool for 5 minutes; it will be warm but not yet set. Pour the liquid into the molds. Refrigerate for at least 4 hours or overnight.
  • Remove the gumdrops from the molds and place onto wax paper. Coat some in granulated red sugar, some in granulated white sugar and some in coarse white sugar; return to the wax paper. Store in a cool dry place until ready to eat.

½ teaspoon baking powder
½ teaspoon salt
⅓ cup shortening
⅔ cup white sugar
1 egg
½ teaspoon vanilla extract
2 tablespoons milk
¾ cup gumdrops, chopped
½ cup blanched almonds

Steps:

  • Preheat oven to 400 degrees F (205 degrees C).
  • Sift and measure flour; resift 3 times with baking powder and salt.
  • In a separate bowl, cream shortening; add sugar gradually and continue creaming. Add well-beaten egg and beat until fluffy. Stir in vanilla. Add flour mixture alternately with milk, beating well after each addition. Add gum drops and mix well.
  • Drop by rounded teaspoonfuls onto a greased baking sheet, about 2 inches apart. Stick 4 almond halves in top of each cookie. Bake for about 10 minutes, or until cookies are lightly browned. Remove immediately to cool.

1/2 cup plus 3/4 cup water, divided
1-1/2 cups sugar

Steps:

  • In a small bowl, sprinkle gelatin over 1/2 cup water; let stand 5 minutes. In a small saucepan, bring sugar and remaining water to a boil over medium heat, stirring constantly. Add gelatin; reduce heat. Simmer 5 minutes, stirring frequently. Remove from heat; stir in extract and food coloring as desired., Pour into a greased 8-in. square pan. 3 envelopes unflavored gelatin
1/2 cup cold water
3/4 cup water
2 cups sugar
Food color
Flavored extract
Additional sugar

Steps:

  • Lightly spray candy molds or miniature muffin cups with cooking spray.
  • In large bowl, sprinkle gelatin on 1/2 cup cold water; set aside.
  • In small saucepan, heat 3/4 cup water and 2 cups sugar to boiling over high heat. Reduce heat; simmer uncovered 5 minutes until sugar is dissolved and mixture thickens slightly. Remove from heat; carefully add to gelatin mixture, stirring until gelatin is dissolved.
  • Divide mixture into 4 small bowls (or more, depending on how many colors/flavors you want). Tint each bowl with 4 to 5 drops food color, then stir in 1/2 teaspoon extract. Carefully spoon mixture into molds. Refrigerate 8 hours or overnight until set.
  • Carefully remove gumdrops from molds, using a butter knife as needed to coax gumdrops from molds. Roll gumdrops in sugar; place on waxed paper. Let stand at room temperature 24 hours to crystallize slightly. Store tightly covered at room temperature.

This is one of my mother's very old recipes for gumdrop squares. Vary the extracts and colors as you like. You can roll them in confectioners' sugar, too.

2 tablespoons unflavored gelatin
½ cup cold water
¾ cup water
2 cups white sugar
¼ teaspoon peppermint extract
¼ teaspoon lemon extract
⅛ teaspoon cinnamon oil
3 drops green food coloring
3 drops yellow food coloring
3 drops red food coloring
¾ cup white sugar for decoration

Steps:

  • Sprinkle gelatin over cold water and set aside.
  • In a medium saucepan over medium heat, bring 3/4 cup water to a boil. Stir in 2 cups sugar and boil 5 minutes. Stir in gelatin mixture. Allow to boil gently for 15 minutes.
  • Dip three shallow, small pans in cold water, then remove. Remove boiling mixture from heat, and divide evenly among three heat-proof bowls. Flavor one bowl with peppermint, one with lemon, and one with cinnamon. Tint the peppermint green, the lemon yellow, and the cinnamon red. Pour each mixture into its own pan and let rest overnight to set.
  • Turn gumdrops out onto a sugared board and cut into squares with a sharp knife. Roll cut gumdrops in sugar. Let stand until firm.

1-1/3 cups applesauce
2 packages (3 ounces each) red or green gelatin
2 envelopes unflavored gelatin
1 teaspoon lemon juice

Steps:

  • In a large saucepan, combine 2 cups sugar, applesauce, red or green gelatin, unflavored gelatin and lemon juice; let stand for 1 minute. Bring to a boil over medium heat, stirring constantly. Boil for 1 minute. Immediately pour into a cold 11x7-in. baking dish coated with cooking spray. Refrigerate for 3 hours or until firm., With a spatula, loosen gelatin from sides of pan. To remove, invert onto waxed paper. Using kitchen scissors or small sharp cookie cutters dipped on hot water, cut into 1-in. squares or shapes. , Place on waxed paper. Dry at room temperature for about 8 hours or until slightly sticky. Roll in remaining sugar. Store in an airtight container.

1/2 cup granulated sugar
1/2 cup packed brown sugar
1/4 cup shortening
1 1/4 cups buttermilk

1/2 teaspoon baking soda
2 eggs
1 cup small gumdrop, cut in half
1/2 cup chopped nuts, if desired

  • Heat oven to 350°F. Grease bottom only of loaf pan, 9x5x3 inches.
  • Beat all ingredients except gumdrops and nuts in large bowl with electric mixer on low speed 15 seconds. Beat on medium speed 30 seconds, scraping bowl constantly. Stir in gumdrops and nuts. Pour into pan.
