This colorful salad is happy because it isn't drowning in a heavy mayonnaise or sour cream dressing. Your heart will be happy because it's a healthy salad and YOU'LL be happy because this salad tastes GREAT! Everyone I have served this to loved it and had no idea it was "healthy".

2 large Red Delicious apples
3 large granny smith apples
1 -2 teaspoon lemon juice
8 ounces pineapple tidbits, drained
1/2 cup raisins
1/4 cup rough chopped raw almonds
6 ounces low-fat vanilla yogurt

Steps:

  • Core and cut the apples into bite-sized pieces and toss with lemon juice to prevent the apple pieces from browning.
  • In a large bowl toss all the ingredients together except the yogurt.
  • Gently fold in yogurt and chill the salad before serving.
  • NOTE: sometimes I substitute 1/2 c finely chopped celery for the raisins for a less sweet salad.

juice of 1/2 lemon
1/4 teaspoon dry mustard
3 tbls. olive oil (light)
1/3 cup triple sec
salt and pepper to taste
1 head romain lettuce
red onion (in season) or vidalia onion sliced in thin rings
blood orange (peeled and thinly sliced
lightly toasted walnuts
shaved slices of picorino cheese

Steps:

  • stir together, olive oil, dry mustard, triple sec and lemon juice - add salt and pepper to taste. thoroughlky rinse romain and pat dry, tear each leaf into 3 pieces, add 1/2 cup of onion rings, and orange slices, add dressing a little at a time and toss until ingredients are coated then add 1/4 cup of toasted walnuts and top with shaved slices of cheese.

1 romaine lettuce head
1 red onion, sliced
1 can(s) canned mandarin oranges
1 small package slivered almonds
DRESSING
2/3 c vegetable oil
1/2 c sugar
1/4 c vinegar
1 Tbsp dijon mustard
1 Tbsp poppy seeds

Steps:

  • 1. Shred or cut the lettuce, add onion slices, mandarin oranges and almonds
  • 2. Mix the dressing ingredients together. Chill. and pour over the vegetables. Serve and enjoy
