3 tablespoons butter
1 small yellow onion, chopped
4 cups frozen shredded hash browns
1 lb bulk sausage, mild, hot (or 1 lb sage sausage)
2 1/4 cups whole milk
8 large eggs
1 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon freshly grated nutmeg
2 tablespoons Dijon mustard
8 cups cubed French bread or 8 cups Italian bread, crusts removed
2 cups grated cheddar cheese
2 cups freshly grated parmesan cheese

Steps:

  • Preheat the oven to 350 degrees F.
  • Spray a deep 13 by 9-inch casserole dish with vegetable oil cooking spray.
  • Melt the butter in a large frying pan.
  • Add the onion and saute over medium-low heat until soft, about 5 minutes. Add the hash browns and break apart.
  • Saute until soft, about 5 minutes.
  • In a second frying pan, saute the sausage, breaking apart large clumps. When the sausage is cooked through, remove it from pan.
  • In a large mixing bowl, combine the milk, eggs, salt, pepper, nutmeg and mustard, briskly to blend.
  • To assemble, spread the onions and hash browns evenly at the bottom of the greased dish.
  • Place the bread cubes evenly on top of hash browns.
  • With a slotted spoon distribute sausage as the third layer.
  • Pour the milk and egg mixture over these layers.
  • Add Parmesan as the next layer, while then adding the Cheddar.
  • *Cook's Note: Save a few tablespoons of cheddar for the last 10 minutes of baking, where you can add a fresh topping of melted cheddar.
  • Bake the casserole, uncovered for 45 to 50 minutes, until puffed and golden brown.

HASH BROWNS SAUSAGE CASSEROLE

Hash Browns Sausage Casserole image

I got this recipe from my mother-in-law after having it for breakfast at her house. I've never made it myself, but it was so delicious, I thought I'd share. I'm not sure if you can use another type of oil, so any reviews using a different oil would be appreciated.

Time 55m

Yield 6-8 serving(s)

Number Of Ingredients 7

4 eggs
2 cups evaporated milk
5 cups frozen hash brown potatoes, thawed
3 tablespoons corn oil
1 lb sausage, browned and well drained
2 cups grated cheddar cheese
4 tablespoons minced onions

Steps:

  • Beat eggs and milk, set aside.
  • In a large bowl, mix hashbrowns and oil.
  • Press along the bottom and up the sides of a 9x13 baking dish.
  • Bake at 475* for 15 minutes.
  • Layer the sausage, cheese, and onions over the potatoes.
  • Pour the egg/milk mixture evenly over the top.
  • Turn oven down to 350* and bake for 30 minutes until firm.

Tips:

  • Choose the right potatoes: Russet potatoes are the best choice for hash browns because they have a high starch content, which helps them hold their shape when cooked. You can also use Yukon Gold potatoes, but they will be less crispy.
  • Shred the potatoes evenly: Use a grater with large holes to shred the potatoes. This will help them cook evenly.
  • Season the potatoes well: Salt and pepper are essential seasonings for hash browns, but you can also add other spices, such as garlic powder, onion powder, or paprika.
  • Cook the potatoes in a hot skillet: Use a large skillet over medium-high heat to cook the potatoes. This will help them get crispy on the outside and tender on the inside.
  • Don't overcrowd the skillet: If you crowd the skillet, the potatoes will steam instead of fry. Cook the potatoes in batches if necessary.
  • Flip the potatoes once: Once the potatoes are golden brown on the bottom, flip them over and cook until they are golden brown on the other side.
  • Serve the hash browns hot: Hash browns are best served hot out of the skillet. You can top them with your favorite toppings, such as eggs, cheese, or salsa.

Conclusion:

Hash browns are a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. They are easy to make and can be customized to your liking. With a few simple tips, you can make perfect hash browns every time. So next time you're looking for a quick and easy meal, give hash browns a try. You won't be disappointed!
