1/2 loaf Hawaiian bread
2 (16 ounce) cans Carnation Evaporated Milk
3/4 cup butter
6 egg yolks
8 ounces coconut (frozen)
3 teaspoons vanilla extract
1/3 teaspoon nutmeg
1/3 teaspoon cinnamon
2 cups sugar

Steps:

  • Mix egg yolks, sugar and butter together.
  • Add milk slowly. Add bread, coconut, vanilla, nutmeg and cinnamon.
  • Use baking pan (greased) and bake at 350 degrees for 45 minutes.

1 (1 lb) Hawaiian sweet bread
1 (20 ounce) can apple pie filling
2 cups milk (even skim milk is okay)
3/4 cup sugar
1/2 cup butter
5 eggs, beaten
cinnamon, to sprinkle

Steps:

  • Peel off brown crust from bread and cut bread into bite sized pieces and place into a 13x9x2 inch pan that has been sprayed/greased.
  • Top bread cubes with apple pie filling.
  • In medium sized pot scald milk; then stir in sugar and butter till it melts. Remove from heat and cool somewhat.
  • Combine eggs with some of the milk mixture (tempering) and then add all back to pot. Pour over bread and apple pie filling. Sprinkle with cinnamon.
  • Bake in 350 degree oven for 30 minutes.
  • Store in refrigerator. I much prefer mine chilled, as opposed to warm, but either way it's good!

Bread Pudding:
1 (1-pound) King's Hawaiian Sweet Bread - cut into cubes or tear into pieces
8 large eggs
2 cups heavy whipping cream
2 ½ cups whole milk
1 ¼ cups sugar
1 teaspoon vanilla extract
1 ½ cups milk chocolate chips (adjust the amount & kind of chocolate chips to your preference)
1 ½ cups chopped macademia nuts (again adjust to your liking) - toast lightly before topping bread pudding.
Glaze:
1 (10 - 12 oz.) can coconut milk
1 cup powdered sugar

Steps:

  • To make bread pudding: 1. Lightly butter a 13x9x2-inch baking dish. Layer the bottom of prepared dish with bread cubes first, then sprinkle in the chocolate chips throughout. Repeat the layering with rest of bread and chocolate chips. 2. In a large bowl, whisk the eggs, cream, milk, vanilla extract and sugar to blend. 3. Pour custard over the bread cubes, and press the bread cubes gently to submerge. Let stand for 30 minutes, occasionally pressing the bread cubes into custard mixture. (Recipe can be prepared up to this point 2 hours ahead. Cover and refrigerate.) 4. Preheat oven to 350 degrees F. Bake until the pudding puffs and is set in the center, about 45 minutes (if not ready, keep baking little more & checking each 5 minutes increment.) 5. Let cool slightly before drizzling coconut glaze. ***** While the pudding is baking, work on the coconut glaze. To make the coconut glaze: 1. Pour the can of coconut milk and powdered sugar into a small pot. 2. Simmer over medium-low heat until the glaze thickens, stirring constantly. 3. Set aside until bread pudding is ready to glaze. 4. Spoon glaze over the entire bread pudding and top with toasted macademia nuts before serving. Or serve a piece of bread pudding into each serving bowl then drizzle glaze and top with nuts individually. Enjoy!
