1-1/2 pounds ground beef
2 tablespoons chopped onion
1 can (10-3/4 ounces) condensed tomato soup, undiluted
1 teaspoon chili powder
1 teaspoon dried oregano
1-1/2 teaspoons ground cumin
1/4 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon pepper
CHEESE SAUCE:
4 tablespoons butter, cubed
4 tablespoons all-purpose flour
1 cup milk
1 can (11 ounces) condensed cheddar cheese soup, undiluted
1/2 pound process cheese (Velveeta), cubed
Corn chips
Cooked rice
Shredded lettuce
Picante sauce, optional

Steps:

  • In a skillet, cook beef with onion until the beef is browned and the onion is tender; drain. Stir in tomato soup, chili powder, oregano, cumin, garlic powder, salt and pepper; simmer until heated through., For cheese sauce, melt butter in a saucepan. Add flour; cook and stir until a smooth paste forms. Gradually add milk; cook and stir until thickened. Stir in cheese soup. Add cheese; cook only until it melts. , To serve, prepare individual corn chip "nests"; layer each with meat mixture, rice and lettuce. Top with cheese sauce, and picante sauce if desired.

1 green bell pepper, chopped
1 onion, chopped

1 carrot, shredded
1 cup shredded Cheddar cheese
½ cup sour cream
1 cup salsa

Steps:

  • In a medium saucepan, combine the kidney beans, salt, chili powder and pepper. Cook over medium heat until heated through.

1 cup crushed saltine crackers, about 20 crackers
2 cups shredded lettuce
2 medium tomatoes, diced
1 medium onion, chopped
1 cup cooked rice
1 1/2 lbs ground beef, browned and drained
3/4 cup tomato juice
1/4 cup water, plus
2 tablespoons water
1 1/2 tablespoons taco seasoning mix
salt and pepper
1/4 cup butter, melted
1/4 cup all-purpose flour
2 cups milk
1/2 lb Velveeta cheese, cubed
1 1/2 cups shredded sharp cheddar cheese
5 ounces jars sliced stuffed olives

Steps:

  • Put crushed saltines in bottom of 9"x13" ungreased baking dish.
  • Prepare lettuce, tomatoes and onion and set aside.
  • Layer rice on top of cracker crumbs.
  • Brown and drain ground beef.
  • Add tomato juice, water, taco seasoning mix, and salt and pepper to taste.
  • Simmer 15-20 minutes to allow some of the liquid to absorb.
  • In a heavy saucepan, melt margarine, stir in flour and blend until smooth.
  • Gradually stir in milk.
  • Bring to boil, cook and stir for two minutes.
  • Reduce heat, add Velveeta cheese cubes and stir until melted.
  • Assemble dish by layering beef on top of rice.
  • Top with prepared lettuce, tomato and onions.
  • Pour cheese sauce over top.
  • Top with shredded cheddar cheese and garnish with the sliced stuffed olives.

10.5 ounces cream of chicken soup
¼ cup milk
3 boneless chicken breasts (cooked and diced)
4 cups rice (cooked)
2 tomatoes (diced)
6 ounces black olives (sliced)
1 cups chow mein noodles
20 ounces pineapple tidbits (drained)
1 ½ cups cheddar cheese (shredded)
1 green bell pepper (diced)
¾ cup coconut (shredded)

Steps:

  • Mix soup and milk together. Then add in shredded chicken. Heat and stir until well blended.
