Time 40m

Number Of Ingredients 11

1 tablespoon vegetable oil, such as safflower
1 medium onion, chopped
4 garlic cloves, chopped
Coarse salt and ground pepper
2 tablespoons tomato paste
2 tablespoons chili powder
2 tablespoons unsweetened cocoa powder
1 pound ground beef sirloin
2 cans (14.5 ounces each) diced tomatoes in juice
2 cans (14.5 ounces each) pinto beans, rinsed and drained
Toppings, such as reduced-fat sour cream, sliced scallions, and baked tortilla chips, for serving (optional)

Steps:

  • In a large, heavy-bottomed saucepan, heat oil over medium-high. Add onion and garlic, and season with salt and pepper. Cook until softened, 3 to 5 minutes.
  • Add tomato paste, chili powder, and cocoa powder. Cook, stirring, until mixture is fragrant, about 1 minute. Add beef, and cook, breaking up with a spoon, until no longer pink, 3 to 5 minutes.
  • Add tomatoes (with their juice) and beans. Bring to a boil over high; reduce to a simmer, and cook until chili is slightly thickened, 10 to 15 minutes. Serve with toppings, if desired.

Yield 12 servings

Number Of Ingredients 22

2 tablespoons olive oil
1 pound ground pork
1 pound ground beef
1 pound chuck steak, fat trimmed, cut into 1-inch cubes
6 garlic cloves, minced
2 cups water
2 tablespoons ground cumin
2 tablespoons chili powder
2 teaspoons dried oregano
2 teaspoons salt
1 teaspoon cayenne pepper
3 6-ounce cans tomato paste
2 teaspoons sugar
1 cup diced celery
1 cup diced carrots
3 cups diced fresh tomatoes
3 cups diced onions
3 cups diced red bell peppers
3 cups canned black beans, drained, rinsed (from three 15-ounce cans)
1 cup chopped fresh cilantro
2 3/4 cups (about) beef broth
Grated cheddar cheese

Steps:

  • Heat olive oil in heavy large pot over medium-high heat. Add ground pork and ground beef and sauté until brown, about 3 minutes. Add cubed beef and garlic and sauté 5 minutes. Add 2 cups water; bring to boil. Add cumin, chili powder, oregano, salt, and cayenne pepper. Reduce heat, cover, and simmer 10 minutes. Add tomato paste and sugar and simmer 5 minutes. Add celery, carrots, tomatoes, onions, and peppers and simmer until vegetables are tender, about 30 minutes. Add black beans and cilantro to chili. Add beef broth 3/4 cup at a time, until thinned to desired consistency. (Can be prepared 1 day ahead. Refrigerate uncovered until cold, then cover and keep refrigerated.) Bring chili to simmer. Ladle hot chili into bowls; top with grated cheddar cheese and serve.

Tips:

  • Use high-quality, lean ground beef for the best flavor and texture.
  • Brown the ground beef in a large pot or Dutch oven over medium heat, stirring often to break up the meat and prevent it from clumping.
  • Add chopped vegetables, such as onions, bell peppers, and garlic, to the pot and cook until they are softened.
  • Season the chili with a variety of spices, such as chili powder, cumin, oregano, and paprika.
  • Add diced tomatoes, tomato sauce, and beef broth to the pot and bring to a boil.
  • Reduce heat to low, cover, and simmer the chili for at least 1 hour, or up to 4 hours.
  • Serve the chili hot, garnished with shredded cheese, sour cream, and chopped cilantro.

Conclusion:

Healthy beef chili is a delicious and hearty dish that is perfect for a cold winter day. It is also a great source of protein, fiber, and vitamins. By following these tips, you can make a healthy beef chili that your whole family will enjoy.
