This recipe has been adapted from another cooking site. It was billed as the "South Beach Salad". I don't know if the changes I have made have changed that or not. It is delicious and made a wonderful and different salad to serve for guests.

3 tablespoons extra virgin olive oil
2 tablespoons white wine vinegar
1/4 teaspoon Dijon mustard
1/4 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper
1 (14 ounce) can hearts of palm, drained and sliced
1/3 cup red bell pepper, diced
1/2 cup artichoke heart, drained and quartered
1/3 cup kalamata olive, pitted and halved
1 (6 ounce) package mixed salad greens
2 hard-boiled eggs, sliced
8 -10 cherry tomatoes, halved

Steps:

  • Combine the dressing ingredients in a covered jar and shake vigorously to mix.
  • For the salad, combine the hearts of palm, peppers, artichoke hearts, and olives in a bowl.

100g green bean , trimmed and cut into 2.5cm lengths
1 lemon , halved
1 small red onion , thinly sliced into half moons
2 avocados , stoned, peeled and chopped
150g pack cherry tomato , halved
2 x 410g cans palm heart , sliced into 1cm slices, see tip, below
5 black olives , halved
1 tbsp white wine vinegar
juice 2 limes
3 tbsp extra virgin olive oil
1 tbsp clear honey
1 tbsp chopped coriander

Steps:

  • Blanch the green beans for 1-2 mins in boiling salted water, drain and rinse in cold water. Dry on a tea towel and put in a large salad bowl.
  • Squeeze some lemon over the onion and avocados and let sit for 1 min. Add the tomatoes, hearts of palm, olives, onion, and avocado to the beans.
  • Put the dressing ingredients in a small jar with a fitted lid. Add some seasoning and shake well. Just before serving, pour the dressing over and mix.

3 (14.25 ounce) cans hearts of palm, drained and sliced
2 (.7 ounce) packages dry Italian-style salad dressing mix
½ cup white wine or champagne vinegar
6 tablespoons water
1 cup olive oil
1 (8 ounce) jar green olives, sliced
1 (6 ounce) can sliced black olives
2 tablespoons bacon bits

Steps:

1 tablespoon soy sauce
3 scallions, white and tender green parts only, chopped
1/8 teaspoon ground black pepper
1/2 teaspoon salt
1/2 cup extra-virgin olive oil
32 ounces canned hearts of palm or 2 pounds fresh hearts of palm
1 large red onion, julienned
1 red bell pepper julienned
1 fresh mango, peeled, cut away from the seed and julienned

Steps:

  • Through the feed opening of a running blender add, 1 at a time, vinegar, soy sauce, scallions, black pepper, and salt. Then leaving the blender running, add the olive oil in a slow thin stream.

Since the absorbency of the hearts of palm varies from batch to batch you may need more or less of the olive oil. If making as a salad spoon on top a bed of mixed greens.

3 garlic cloves
1 (28 ounce) can hearts of palm or 2 (14 ounce) cans hearts of palm, drained
1/3 cup extra virgin olive oil (plus or minus, see description)
1 large vine-ripened tomatoes, seeded and diced
1/2 cup scallion, finely chopped (whites of the scallion)
1 dash salt (optional)
mixed greens (optional)

Steps:

  • Using a food processor, puree the garlic into a paste. Add hearts of palm and process to a course purée. With the machine on, add oil in a thin stream until mixture is a velvety purée.
