4 pounds beef stew meat
8 medium onions (2-1/4 pounds), halved and thinly sliced

1 can (28 ounces) diced tomatoes, undrained
1 can (15 ounces) tomato sauce
1-1/3 cups Worcestershire sauce
1/2 cup beef bouillon granules
12 medium red potatoes (about 3-1/2 pounds), cubed
1/2 large head cabbage, chopped
1 pound carrots, thinly sliced
6 celery ribs, thinly sliced (3 cups)
3 cups (about 15 ounces) frozen corn
3 cups (about 12 ounces) frozen peas
3 cups (about 12 ounces) frozen cut green beans
1-1/2 cups (about 15 ounces) frozen lima beans
1 bay leaf
3 teaspoons dried marjoram
3 teaspoons dried thyme
1 teaspoon salt
1 teaspoon pepper
1-1/2 cups (6 ounces) frozen sliced okra

Steps:

  • In a large stockpot, heat 1 tablespoon oil over medium heat. Brown beef in batches, adding additional oil as necessary. Remove with a slotted spoon. Add onions to drippings; cook and stir until tender. Discard drippings; return beef to pot. Stir in water, tomatoes, tomato sauce, Worcestershire sauce and bouillon. Bring to a boil. Reduce heat; simmer, covered, 45 minutes., Stir in potatoes, cabbage, carrots, celery, corn, peas, green beans, lima beans and seasonings. Return to a boil. Reduce heat; simmer, covered, 35 minutes. Stir in okra; cook 15-20 minutes longer or until beef and vegetables are tender. Discard bay leaf.

Steps:

  • Heat oil in heavy large Dutch oven over medium-high heat. Add beef and cook until brown, stirring occasionally, about 8 minutes. 2 medium white onions, chopped

2 gallons beef stock, i use superior touch 8tbs beef flavor and 4 tbs vegetable flavors
3 lbs frozen mixed vegetables
12 stalks celery, chopped
5 large onions, chopped
3 (12 ounce) cans whole kernel corn
1/2 gallon v 8 juice
8 ounces pearl barley
3/4 cup Lea & Perrins Worcestershire Sauce
2 teaspoons salt
2 tablespoons black pepper
1 bay leaf
1 tablespoon ground marjoram
1 1/2 teaspoons ground thyme
2 (12 ounce) cans stewed tomatoes, chopped
1/4 lb butter

Steps:

  • In heavy skillet, brown meat in butter. DO this in one pound batches for better browning. Deglaze with stock between batches if necessary.
  • Place all ingredients except the frozen vegetables and 4 oz of the pearl barley in 4 1/2 gallon counter top roaster.
  • Heat on high covered until boiling, remove cover and reduce heat to 250°.
  • Simmer for 2 hours or until beef is tender.
  • Add frozen vegetables and remainder of barley and simmer for another hour.

1 tablespoon garlic, chopped
1 1/4 ounces onion soup mix
32 ounces reduced-sodium beef broth

10 ounces squash, diced

1 lb beef stew meat (diced into smaller pieces)
3 stick carrots
3 stick celery
4-5 smallish to medium potatoes
4 beef bouillon, cubes
1 can(s) (14.5 oz) fire roasted tomatoes
4-5 c water
1 large onion
2 1/2 tsp thyme, dried
1 1/2 c pastina (any kind, in this recipe i used rosa marina)
2 Tbsp oil
1 Tbsp butter
salt & pepper to taste
1 large container (32 oz) beef broth

Steps:

  • 1. Dice your celery, carrots and potatoes set aside. Dice your onions in separate bowl, set aside. Make sure your beef stew pieces are smaller in size to ensure even cooking.
  • 2. Add your veggies to your crockpot. In a saute pan, add your oil & butter. Once heated, add your stew meat. Saute till no longer pink, than add your onions. Saute for 1-2 more minutes. Remove and add to crockpot as well.
  • 3. Add your fire roasted tomatoes and thyme to the veggie/meat mixture and stir. Add your bouillon cubes, beef broth and water, salt and pepper. Stir to incorporate. Cover and let cook on low 7-8 hours. After about 6 hours or so, taste and see if you need more salt & pepper or a little more beef broth. You need enough broth to cook the pastina. If seasonings are to your taste and there is enough broth to cook your pastina with a litle to spare. Add your pastina, stir and cover again till ready in about the last 15 minutes or so...
  • 4. Ladle into bowls and serve with crusty bread or rolls. We love slices of cheese along with the bread with this as well. Down home comfort in a bowl!!

1 lb pre-roasted chuck roast cubed
3 can(s) beef broth (see note)
1 pkg 16 oz, frozen mixed veggies (soup variety)
2 c celery sliced and diced
2 c onion sliced and diced
1 1/2 Tbsp dried parsley
salt and pepper to season
ADDITIONAL OPTIONS
1 can(s) 12 oz. sliced mushrooms drained
1 c cooked barley or
1 c cooked rice or
2 c cooked elbow macaroni
1 can(s) 7 oz. tomato sauce
2 c cabbage sliced and diced size of a nickle
1 c turnip or rutabaga diced
1 can(s) diced potatoes or cup of fresh diced potatoes

Steps:

  • 1. I use pre-roasted chuck roast for this soup because of its texture and flavor. When you get a piece of beef on the spoon you can savor it. You could use any beef of your choice, Even hamburger. But -- I've stated my choice. Nicely cubed.
  • 2. I chill the cooked roast overnight so that it can be cubed nicely.
  • 3. You can prepare in a large soup kettle or the crock pot. I like the convenience of the crock pot.
  • 4. Add the three cans of beef broth to the crock pot. Cube the beef. Add all other ingredients. Cook on high for one hour. then on low for 2 to 3 hours. Use salt and pepper lightly, and adjust near end of cooking time. I'm a low salt cook. Folks can add salt and pepper when served.
  • 5. If you are fond of certain veggies use more of them. If you want a tomato based soup add the can of tomato sauce at the start. It's delicious with or without the tomato sauce. You could pick two or so of the options.
  • 6. Serve with a nice French or Italian Bread or Baguette. Serve and enjoy. This freezes well. It is hearty enough that a little additional water or beef broth can be added when reheating from the freezer to make up for the ingredients absorbing the broth.

  • 8. NOTE: The reserved juices from the roast with fats removed is an excellent addition, However I usually use the juices for gravy for the roast beef dinner or for hot beef sandwiches. 1/2 lb beef sirloin
3 can(s) mixed vegetables
1 pt tomatoes
2 c cabbage, chopped
3 Tbsp kitchen bouquet
1 large onion, minced
4 beef bouillon, cubes
salt to taste

1/2 c dried lentils
1 tsp meat tenderizer, seasoned or plain

Steps:

  • 1. Cook beef until tender using the meat tenderizer, I prefer to pressure cook it, but it can be boiled. After cooking, shred or cut into small pieces. Retain broth from cooked meat.
  • 2. In large soup pan, mix all the remaining ingredients with the cooked meat and juice and add enough water to make it "soup-like". Allow extra water for what the lentils will absorb.
  • 3. Bring to boil over high heat. Reduce heat to low and simmer for 1-2 hours, adding additional water as needed, 1 cup or so at a time.

2 lb chuck roast, trimmed of fat; but reserved, cut meat into bite size pieces
2-3 carrots, peeled and diced
1 large onion, peeled and diced
3-4 celery ribs, cleaned and diced
2-3 small turnips, peeled and diced
3-4 medium potatoes, peeled and diced
2 can(s) 15oz each, petite diced tomatoes, or fresh tomatoes
2 can(s) 15oz each, stewed tomatoes
1 can(s) 10-15oz, tomatoes and green chillies
1-2 small cans v8 juice (individual size)
3 handfuls, fresh green beans, ends picked, beans cut in half
2-3 ears corn, cleaned and cut from cob
2-3 handfuls lentils for veg. soup. i use 1 pkg manischewiets vegetable soup mix and leave out the seasoning packet enclosed. if i can't find it, i use bob's red mill vegetable soup mix.
6 oz frozen baby lima beans
10ox box frozen brussels sprouts
10ox box frozen peas
10oz box frozen cut okra
1 tsp dried parsley
salt and pepper to taste

Steps:

  • 1. Have large soup pot heating on stovetop, drop reserved fat from roast into hot pot; cook until browned, then remove.
  • 2. Place meat pieces in pot; brown on both sides in rendered fat, may need additional oil to finish browning, all meat pieces.
  • 3. Add diced carrots, onion, celery, turnips and potatoes into soup pot with meat. Stir to get all ingredients mixed.
  • 4. Add canned tomatoes and V8 Juice. Add green beans, corn, lima beans and Vegetable Soup Mix. Add parsley, salt and pepper to taste. Add enough water to cover ingredients.
  • 5. Bring to a boil then turn heat down to simmer and cover with lid ajar. After soup has cooked about 1 hr. add brussels sprouts, okra and peas. Simmer until all vegetables, lentils and meat are tender.
  • 6. Check occasionally, stir to make sure nothing is sticking to bottom and there is enough broth; more water, V8 Juice or tomatoes can be added if needed or desired.

1 quart Italian cut green beans
1 1/2 quarts water

1 1/2 cups frozen corn
5 potatoes, peeled and cut in 1/2 inch cubes

  • Cut up the chuck roast and all the vegetables as directed in the ingredients section. Add the olive oil to a large stock pot and place the chuck cubes in the bottom to brown over medium high heat. When half browned add all the seasonings and onion.
  • Continue stirring and browning about 5 minutes and add the green beans, water, and carrots. Let it come to a slow boil and add all the other vegetables. Add a little more water if necessary to cover all the items well and add about an inch more in the pot depending on how tall it is.
  • Turn down the heat to medium low and continue to simmer for about 45 minutes - stirring occasionally. Enjoy!
