1 bag (24 oz) frozen potato wedges with skins
1 pouch Progresso™ hearty vegetable stew with beef
2 cups shredded sharp Cheddar cheese (8 oz)
1/2 cup crumbled blue cheese
1/4 cup chopped green onions

Steps:

  • Heat oven to 425°F. Spray large cookie sheet with cooking spray. Bake potato wedges on cookie sheet as directed on bag, stirring halfway through.
  • Meanwhile, heat stew as directed on pouch. Mound baked potato wedges in 10-inch ovenproof skillet. Sprinkle 1 cup of the Cheddar cheese over wedges. Pour stew over cheese and wedges. Top with remaining Cheddar cheese. Bake 5 to 7 minutes longer or until cheese is melted. Top with blue cheese and onions. Serve immediately.

1 (16 ounce) can cannellini beans, drained and rinsed
5 medium carrots, peeled and sliced
5 cloves garlic, sliced
2 stalks scallions, minced
1 cup quick-cooking barley
1 pinch dried dill weed, or to taste
1 pinch dried marjoram, or to taste
1 pinch ground thyme, or to taste
1 pinch celery salt, or to taste
1 pinch dried savory, or to taste
1 pinch dried rosemary, or to taste
dried carrot greens to taste
salt to taste
1 (10 ounce) package frozen Brussels sprouts
4 leaves collard greens - rinsed, trimmed, and chopped
1 tablespoon pine nuts

Steps:

  • Combine 1 cup water, cannellini beans, carrots, garlic, and scallions in a large pot. Cover and bring to a boil. Add barley and remaining water. Stir in dill, marjoram, thyme, celery salt, savory, rosemary, carrot greens, and salt. Cover and return to a boil. Reduce heat and cook until barley is tender, 10 to 12 minutes.
  • Stir in Brussels sprouts, collard greens, and pine nuts. Taste and adjust seasonings.
  • Let simmer until Brussels sprouts are hot, 5 to 10 minutes. You can let simmer longer to let the flavors meld, adding more water if desired or needed, though the consistency should be thick.

6 -8 russet potatoes
3 tablespoons olive oil (or as desired)
garlic salt
black pepper

Steps:

  • Slice washed, unpeeled potatoes into wedges, about a quarter of an inch thick.
  • Toss potato wedges with olive oil and place in baking pan (it's a good idea to coat the pan with cooking spray to prevent sticking).
  • Sprinkle liberally with garlic salt and black pepper.
  • Bake 30 min at 400 degrees; broil for 1-2 minutes to make fries crispy, and serve hot.

1 tablespoon canola oil
1 lb ground meat (I know, the title says hamburger, but I actually use Turkey)
1 onion, chopped
4 celery ribs, sliced
1 cup carrot, sliced
2 cups frozen corn
2 cups frozen green beans
1 (46 ounce) can V8 vegetable juice
1/2 teaspoon celery seed
3 garlic cloves, minced
salt & pepper

Steps:

  • Add oil to large Dutch Oven type dish.
  • Brown the ground meat until cooked through.
  • Add onions, celery, and carrots. You can add other vegetables to this dish, but these are the main ones that I remember from the original recipe.
  • Cook until the vegetables get nicely carmelized. Add remaining ingredients.
  • Simmer for about an hour. We've rushed this and it's still good, but the longer it simmers the richer the flavor.
  • This tastes good with nice, fresh cornbread. I've even made Cheddar-Dill Bisquick Drop muffins as well. Crusty bread would work great too!
