CRUNCHY HOMEMADE GRANOLA
Cinnamon, nutmeg and honey add a dash of heartwarming charm to this crunchy homemade granola. "We like it over yogurt or milk, but it's also good on it's own as a snack," promises Oshkosh, Wisconsin's Margaret Potempa. New dietary recommendations encourage half of the grains in the diet to come from whole grains like the oatmeal in this recipe. Try sprinkling this granola on yogurt, salads, ice cream and baked winter squash to help meet your dietary goals.

No fructose corn syrup. Can make an infinite combination of desired flavors...and better than store-bought, but be aware that these will be a tad softer. The last ingredient should read "white or chocolate chips".

Steps:
- Preheat the oven to 325. Line a rimmed baking sheet with parchment paper or foil. Combine the oats, wheat germ, flax seeds, sesame seeds and almonds; spread out evenly on the rimmed baking sheet and toast for approximately 10 to 15 minutes until golden, stirring occasionally and watching carefully so as not to burn.
- In the meantime, in a large bowl combine salt, coconut, cinnamon and dried cranberries; set aside.
- In a large measuring cup place the vanilla, honey, butter and brown sugar. Microwave approximately 2 minutes. Mixture will foam and bubble. Stir to completely dissolve brown sugar.
- When oat mixture is done toasting, transfer to the same bowl with coconut mixture and stir to evenly combine. Add the honey mixture and stir to incorporate.
- Line a 9" x 13" baking pan with waxed paper. Spread the mixture, using the back of a wooden spoon, pressing to create a smooth, even surface. Place another piece of waxed paper over the top, pressing down to evenly compact the mixture. Compacting is important so the bars won't fall apart when cut. (Suggestion: place one pan of same size within the other and press to even out mixture.).
- Refrigerate and completely cool the mixture about 2 hours to assure a clean cut. Firmly press down with a large knife to cut into bars. Do not saw. Wrap bars in waxed paper and store in refrigerator or freezer.

Tips:
- Choose the Right Oats: Opt for rolled oats or old-fashioned oats for a classic granola texture. Quick oats tend to get too soft.
- Nuts and Seeds: Use a variety of nuts and seeds for added flavor, texture, and nutrients. Some popular choices include almonds, walnuts, pecans, pumpkin seeds, and sunflower seeds.
- Sweeteners: You can use honey, maple syrup, or agave syrup as the sweetener. Honey adds a rich flavor, while maple syrup provides a more subtle sweetness. Agave syrup is a good option for vegans.
- Spices: Add a touch of spice to your granola with ground cinnamon, nutmeg, or ginger. These spices enhance the flavor and add warmth.
- Mix-Ins: Feel free to add other ingredients to your granola, such as dried fruits, chocolate chips, or coconut flakes. These additions make your granola more interesting and delicious.
- Bake Evenly: Spread the granola evenly on a baking sheet and stir it every 10-15 minutes during baking to ensure even browning.
- Store Properly: Store the granola in an airtight container at room temperature for up to two weeks. You can also freeze it for up to three months.
Conclusion:
Homemade granola is a delicious and nutritious breakfast option that is easy to make. With a variety of recipes available, you can customize your granola to suit your taste preferences. Whether you prefer a classic granola with oats, nuts, and seeds, or a more unique granola with dried fruits or chocolate chips, there is a recipe out there for you.
