Steps:
- Place the shrimp in a large mixing bowl. Add 1/2 cup lime juice and let stand for 15 minutes so the shrimp can "cook" in the lime juice (any less and it won't cook, any more and it toughens).
- Meanwhile, in a separate large mixing bowl, mix the remaining 1/2 cup lime juice, cucumbers, tomatoes, cilantro, red onions and serrano chile to incorporate evenly. Transfer the mixed vegetables into the shrimp bowl and mix well to incorporate. Season the ceviche with some salt. Serve with saltine crackers, bottled hot sauce and lime wedges if desired.

Steps:
- Place the coconut in the palm of your hand. With the back of a cleaver or a heavy knife, whack the coconut along its middle, rotating it in your hand until it splits in two. (As it begins to crack, it will leak; work over a large bowl if you wish to save the liquid.) Rinse the halves and use a table knife to pry the coconut meat away from the outer shell. Using a vegetable peeler, make thin strips of coconut meat until you have 2 1/4 cups. Set the strips aside. (Save the remaining coconut meat for another use.)
- Place the coconut milk, lime juice, nuoc mam, ginger, jalapeno and sugar in the container of a blender and blend until very smooth. When ready to serve, toss the tuna in the sauce. Toss again with the coconut strips, cilantro, scallions and chives. Place in small serving bowls and garnish with watercress and red bell pepper.

Tips:
- For the freshest ceviche, use the freshest fish you can find. Look for fish that is bright and shiny, with no off odors.
- If you are using frozen fish, thaw it completely before using. This will help prevent the ceviche from becoming watery.
- Cut the fish into small pieces so that it will marinate more evenly.
- Use a variety of citrus juices to give the ceviche a complex flavor. Lime juice is the most common, but you can also use lemon juice, orange juice, or grapefruit juice.
- Add some chopped vegetables to the ceviche for extra flavor and texture. Common vegetables include onions, tomatoes, cucumbers, and bell peppers.
- Season the ceviche with salt, pepper, and other spices to taste.
- Marinate the ceviche for at least 30 minutes before serving. This will allow the flavors to meld together.
- Serve the ceviche chilled, with tortilla chips, crackers, or bread.
Conclusion:
Honduran ceviche is a delicious and refreshing dish that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. With its bright flavors and healthy ingredients, ceviche is a dish that everyone can enjoy.
